tbh I personally haven't tried them, because they are mostly made from beef or pork. And I don't have either.
But there are few which I know are super popular among the Khasis: Jadoh, it is made from bone marrow of either chicken or pig mixed with rice and spices. Than there is the famous sauce/puree called Tungrymbai, although it stinks but it is favorite of many non-Khasis too. Pukhlein is a snack made of rice and sugar/gur, similar to Assamese pitha. Doh Khlieh is another pork based salad.
If you eat pork, than they are quite a few items.
