I actually think that the CVs feel that they need to embellish Mahadev's greatness by showing him take on multiple demons @ the same time, despite the fact that each of the demons he trounced had major boons that really stretched even him. Normally, every one of Mahadev's victories was remarkable in itself, and took some serious fighting. However, the CVs seem to think that he had a cakewalk, and so decided to spice things up a bit by overlapping Vritra, Taki, Shumbha, Vidyunmali and who knows who else.

I know that we joked about it before, but I wouldn't be surprised if they showed Tarakasura plotting w/ Ravana @ some point in time.
