Well lets c .. the first time Ishita spoke about getting over Subbu . its in the episode where she convinces Tandon to Let Neel & Trisha get engaged .. her words ..

Note she says .. GET OVER ..
in the next sentence she says ... Raman has not yet gotten over his first love .. so she was very clear where she stood ..
Next scene ... when she speaks to Raman about Subbu .. she cudnt have put it more equivocally about the fact that she is over Subbu . she says that man is OUT OF ME ..
now i know ur a man .. so let me explain this as a woman .. when a woman says .. i HAVE TAKEN THIS PERSON OUT OF ME .. it means .. i am over that person .. this person has no sway over any of my emotions . whether happy or sad .. one becomes indifferent to that person .. it means that chapter of the life is OVER ...
Now the writer has dedicated a 2 very important & LONG scenes to Ishita getting over her past .. for a character who has NO ACTUAL PHYSICAL PLAY in the story .. but as a mythical past .. i think its a scene to many ...
Now about .. Ishita gushing around Mani ... whoa dude .. have u ever met a school friend after years & years ... girls are exactly like this .. u rediscover ur youth .. a time when u giggled instead of smiled .. a time when u gushed instead of clenched ur words .. a time when u talked a mile instead of thot before uttering a single word ..
This is what Ishita is rediscovering .. she is rediscovering her youth .. & any viewer who has ever reconnected with his / her past friends specially school kinds would be able to identify with it ...
Just a kostin .. since i am one of the people to gush over "layered writing" .. did u by any chance wonder what is layered writing ... ? lemme know maybe i cud help throw light on it ..
lemme try helping u here what is layered writing in reference to what u have written about Ishita being "mature & level headed" well heres a woman who is clearly over the moon to meet a best friend since childhood ...she is gushing giggling et all .. just like a young girl ..
the next scene they show this same woman single handedly handle all the rituals of her household .. rituals she has no clue about ..
the next scene they show this woman talking to her husband about an issue pertaining to his ex .. which could potentially impact their 2 kids ...
Thats called layered characterisation ... this is a complete woman . she is an everyday woman .. one who wears many faces .. she is fun when the occasion demands ..she is responsible when responsibility is on her shoulders & she is the PERFECT PARTNER when the need arises ...
