It's because she grew up outside of the Indian subcontinent where it is customary to address elders with sir/ma'am. Even in the work place, you will often see this. In Katrina's case, she picked this up and wanted to fit in, hence the "Rohit sir" and "Yash ji".
It's not just a female thing either. The younger lot of boys (Siddharth, Varun, Ranveer) also refer to Akshay and Aamir etc as "sir" and Madhuri as "Madhuri ma'am"
