It's because she grew up outside of the Indian subcontinent where it is customary to address elders with sir/ma'am. Even in the work place, you will often see this. But in the UK for example we just call everyone by their name, it would be WEIRD as hell if I called my manager anything other than her first name, no matter if she is my age or 69.She's quite calm and composed in this interview for someone so young. In Katrina's case, she picked this up and wanted to fit in, hence the "Rohit sir" and "Yash ji".
It's not just a female thing either. The younger lot of boys (Siddharth, Varun, Ranveer) also refer to Akshay and Aamir etc as "sir" and Madhuri as "Madhuri ma'am"
