PKYEK was the only television series I watched from the beginning to the end and was emotionally invested to an unhealthy level. It started off to just watch it only to troll it (I was a Twihard) but then I grew to love it. I still cherish all the memories and watch it very frequently on Hotstar!
Now coming to the show, I realised there are tonnes of inconsistencies my first time rewatching as an adult. However despite all the loopholes, unnecessary drama and occasional dragging of the storyline, I still feel it was the best college themed show we ever had, with everything fitting so well together. The actors were all perfect for their parts, the music was incredible and the dialogues and direction (esp those initial episodes under Ekta's supervision) was brilliant.
But I gotta say, your question has popped into my head several times over the years too.
According to me the writers did not really think much about how to make AbhIya soulmates because it wasn't needed. You see, when our shows are announced, its usually with the lead actors and they are already endgame, dead or alive. Unless there is a third wheel who causes mayhem in the fandom.
So it was understood by us that Abhay and Piya were endgame, no matter how many people came in between them.
That being said, now I really wish they would have shown what Abhay saw in Piya. Because lets be real, what was not to love in Abhay? He had every damn quality that would make women swoon. The man had a heart, even though he kept it hidden under all those tough layers. The extent he went to for not only Piya, but all her friends and family members, even though he could not stand most of them.
And let me tell you when I rewatched the show, I realised Piya was the WORST character on the show. Other than the Maya incident as you rightly pointed out, what was it about her that made Abhay fall for her? Sure she was sweet, helpful, focussed and was truly self-made. But what happened to all these traits after she came to Dehra Dun?
She lost her dignity and spine after the Maya fiasco and became this annoying little bug in Abhay's life. She did not respect his privacy, never gave him time, would make googly eyes at him even though he would insult her and never listened to him!
What did she do? She always did the opposite of whatever he said: he told her to stay away from Sid, the forest, Jeh and asked her not to interfere and find out who Maithili was. But Piya had no respect for boundaries. The man opened upto her about his biggest, darkest secret, and she freaking ran away from him! When he saved her from the fire and revealed his vampire face, she pushed him away! Piya, you wanted to know the truth, and now you run away? And decide to leave the city? Seriously? Thats how insensitive you are?
There wasn't an ounce of self-respect in her body. Makes me cringe now.
Abhay initially was fascinated yet angry at her because she looked like the woman he loved. It was exactly like the doppleganger situation of TVD. But at least in that show you could clearly see the difference between Elena and Katherine's personalities from the very beginning. It was evident why both the Salvatore brothers fell for her. And when Delena became endgame, the reasons were right in front of us. The writers of that show got us to ship them, root for them. Unlike PKYEK where we just knew Abhay-Piya were endgame.
But as the show progressed, I could only spot reasons for Abhay to stay away from Piya. And I do blame the writers for this.
There was no reason that Abhay would chose Piya based on her behaviour and personality. There as nothing attractive. She literally made all the guys around her go gaga over her, behaved like she had no idea and then would gently let them down (a.k.a Jeh and Kabir).
Post the leap Piya was nothing like the girl we met in the first episode. If anything, she was worse and a true form of walking migraine The writers just put them together because they were supposed to be together and we knew it, otherwise no way would someone like Abhay fall for someone like Piya in real life.
Abhay had been on the planet for a hundred years, he must have met so many people. And of course he must have known some genuinely warm and beautiful ladies over the years. So the writers should have actually focussed on showing Piya to be different than those ladies, in a good way.
All the other girls barring Panchi and Piya were much more consistent and better. While rewatching it even came to my mind that had the writers redeemed T and made her a better person (a la Caroline of TVD), she would've made a better match for Abhay. They would've been a badass vampire couple. Remember cold and stoic Abhay from episode 6 and pair him with a sweeter yet superior vampire T. Muuuuuch better. In fact a redeemed T would've made a better girlfriend for either Abhay or Sid since she wasn't a hypocrite. She liked men based off their looks and money. That was redeemable.
But Piya seemed to say one thing and do the exact opposite.
So all in all, you are right, there was no reason given why Abhay fell for her.
In fact she made him into an overly sensitive emotional fool.
The only reason I don't ship Alina with anyone's because she never got the chance at a normal life. Had she lived a couple of years finding herself, she could then find love. But in that case, I'd have liked to see her with someone warm and normal like Kabir.
