Payal found out the truth by chance when she saw him speaking on a show on television. So he actually didn't guilt trip her to stay with him. And Payal was anyway ready to forgive him even after knowing his truth that he could speak (before knowing that he had sliced off his tongue).
I think Sunder didn't want to tell Payal the truth, because whether she had forgiven him or punished him, it would've hurt her alot no matter what. She might have lost her belief in love or stopped trusting people after that. So he decided to suffer alone without making Payal go through any trauma.

How is it better that Sundar never planned to tell Payal the truth? Isn't that worse that he was ready to perpetuate the lie till the end of time? Sundar's logic was effed up either way. Who cares if she lost her belief in love? Who is he to decide for her? Who is he to make assumptions about the outcome? Do you remember the movie Shabd? In it the writer, Shauqat truly believed that after finding out the truth about Antara, Yash would commit suicide. The writer believed that he could control their lives and rewrite their fates. Shauqat assumed that Yash would take such a drastic step but he didn't. Who's to say that Payal wouldn't have lost her belief in love or trust in people? How could Sundar be so sure? Maybe at that point she would have lost trust (rightly so) but time would heal her wounds from that lie. She would have moved on. She had a support system. People move on. Sundar was just like Shauqat, he was controlling and unstable.
If I were in her place I was have ran off at the speed of light. Sundar got Payal in the end even after all his lies and psychopathy. Do you realize how traumatic that is knowing that someone self-harmed for you? It eats away at that person. They feel guilt for no fault of their own. Payal was a victim and she would have stayed a victim her entire life. Even if Sundar didn't want to tell her, she still found out. She would have found out some day. These things cannot be hidden forever especially a lie as big as that.
