SRK has mostly been beneficiary of trends started by other stars. He's never really started any trend himself. Only built upon trends started by others (romantic films, family films, catering to overseas market etc.). He's been kind of lucky in that sense.
Otherwise no record breaking hits in films trensetting/pathbreaking for their times of release.

It's sometimes funny and paradoxical! Others start trends but aren't consistent. He doesn't really start trends, or shatter records but is consistent and never goes in a "bad"/flop/semi hit phase!

Coming to topic, HAHK hasn't just inspired K Jo or Adi Chopra. It inspired likes of Ekta Kapoor and several Indian movie/TV show makers also to showcase Indian traditions in all their opulence and family dramas and get eyeballs. HAHK nearly permanently kicked out the poor man/villager from the media/pop culture narrative and made it all about rich kids and grandeur. All these serials like Yeh Rishta Kya Kehlata Hai with their focus on rasams, riwaaz and issues like whether to make dal-chawal or roti-sabzi and their happy resolution are from Barjatya universe only.

Wasn't it Salman again who started overseas trends?

True some wanna believe that one movie is more evergreen than the other..but all i know is both were popular abroad and ddlj getting inspiration dont see why some cant digest it..and to say its better thsn
HAHK is subjective as both were well received, both were seen multiple timed, songs hit at parties, etc..

family drama was very in..in the 90s bt since the arrival of hindi soaps and urban audience!!!! it has gone out of fashion!!!! rom com was the most loved genre in the mid 2000s...bt business of bolly has shrunk considerably in the early 2000s due to piracy!!! bt now pplz are bk to the theaters!!!!!

Yes HAHK opened up overseas markets in a big way. First Indian film to do massive business there and make trade take overseas market seriously. I've heard it was the first Bollywood film to celebrate Golden jubilee run in some overseas markets.

I don't think family has gone out of fashion.
If the trend was brought back in 90s then in 2006 Vivah which was a blockbuster despite any huge star. And nowadays good cinema is well accepted.

And yes indeed true that 2002 to 2005 was heavily affected by piracy
