Aish is made for all SLB Heroines pretty much (except his more muted roles)

Hrithik as Ratan (though if he's in nostril-acting mode take a lesser known) and Ranveer as Khilji can stay

Ranveer Singh / Aamir Khan as Khilji

p.s. acting, looks and all that are subjective; I don't find Aishwarya Rai the most beautiful, she's an average performer

I can dream of a few sets of casts... let's see

Aish - Paddu, Vivek Oberoi - Ratan, SRK - Khilji

Madhuri - Paddu, SRK - Ratan, Sanjay Dutt - Khilji

Juhi - Paddu, aAMIR - Ratan, someone else for Khilji.

PC - Paddu, Shahid - Ratan, Ranveer - Khilji

Veer and Sasha in a film is a dream come true for me actually. Well initially DP in it as well. But I kinda stopped liking her totally(idk just lost touch cos she went HW). My only issue is her. So replace her with anyone I would have been much happier indeed! Aditi is pretty too I wouldn't have minded her as PV. But like someone mentioned, she doesn't have that much of a screen presence. And PV is a titular role not just a FL role. Someone with acting chops and screen presence of Anushka would have done wonders. As such, I honestly think Sonakshi would have nailed the role. She has looks and acting chops(maybe grace is the only thing DP scores over Sona here). And not forgetting the amazing offscreen camaderie she shares with both Sasha-Veer, promos will be fun even if the three are to promote the film.
