Paneer nmot only adds flavour to teh dish but also helps in adjusting the salt & sour taste of the food. It will act as a balancer. If the dish is a bit salty or spicy, if you add paneer, it will absorb the extra salt & spice content without compromising on the original taste. So she might use it as one of the ingrediant, so that your dish never gets over spiced.
You can as well add (dip) a raw potato, if your curry is salty, the potato will absorb the salt content to a certain extent.You add tomato puree to your curry if is too spicy (if the curry permits to add coconut, you can add coconut milk or paste)
