Soak capsicum, garlic, green chillies and onion and set aside for 5 minutes (until the onion changes colour).In a bowl, mix tomato, chickpeas white and black, kidney beans, radish, olives, white beans, salt, pepper and lemon juice.Add the pickled mix and mix well. Serve.Note - Can be used as a salad as well as a pickle.

10 - 12 button mushrooms; stems removed to reveal a hollow
1/4 cup grated cottage cheese
1/4 cup grated processed cheese
10-12 mint leaves; finely chopped
1 cup hung curd
1 tablespoon corn flour
1 teaspoon turmeric
Oil
Salt
Red chili powder
Dhania powder
Elaichi ( cardamom) powder
Garam masala
Boil the mushrooms in water for 5 minutes.
Mix grated cottage cheese with mint leaves, salt and red chili powder.
Stuff this mixture into the mushrooms.
For the coating - with hung card mix 1 teaspoon garam masala, dhania powder and elaichi powder. Add salt and red chili powder. Mix in the grated cheese. Heat a tablespoon of oil and add turmeric to it and add this to the mixture.
Coat the mushrooms with this mixture and grill in a preheated oven until golden.
