Tofu tikkis


Ingredients:

200 gms tofu(not very soft)
2 medium onions, finely chopped
A few sprigs of coriander, finely chopped
Salt to taste
Red chilli powder to taste
2 teaspoons dhania (coriander) powder
Oil for frying


Crumble the tofu and add all the remaining ingredients. Shape into tikkis and deep fry.

Raina, you write recipes in such a simple manner I feel the cooking part will also be simple😆

I like the sound of most of the recipes you have there and will try it out. Chocolate is my weakness and so choco shell is a definite try

Its gud...We have it usually 4 breakfast or as evening snack 😊 we sumtimes fill scraped cocunut inside muttapatiri and its gud too

Its different from oridany pathiri...4 ordinary pathiri we use rice flour only

Crispy Fry Bhindi Recipe: Serves 2

Preparation Time: 45- 50 minutes
Cooking Time: 15-20 minutes


Ingredients:

  1. 200 gms Okra/Bhindi
  2. 1/2 tsp red chili powder
  3. 1/2 tsp turmeric powder
  4. 1/4 tsp amchur powder
  5. 1/4 tsp chaat masala
  6. 1/4 tsp garam masala powder
  7. 3 tbsp besan/gram flour
  8. salt or black salt
  9. oil for frying the bhindis

Method:

  • Rinse the okra in water for 3-4 times. Wipe them dry with a kitchen napkin. Slice the okra vertically into 4 pieces. If you have small sized okra, then slice into 2 pieces. Take all your sliced okra in a big thali or a big bowl.
  • Now sprinkle all the spice powders one by one on the sliced bhindi.
  • With a spoon or spatula, gently mix the spice powders with the bhindi.
  • Sprinkle the besan on the bhindi.
  • Again, gently mix the besan with the bhindi. The besan must evenly coat the bhindi.
  • Marinate the bhindi in this mixture for 25-30 minutes (can keep in the fridge). You could also keep it for an hour. (I fried half for lunch & kept the rest in the fridge to be fried for dinner.)
  • In your kadai, heat up the oil. Add a batch of marinated bhindi and fry. Fry the bhindis in batches of 15-20 (easier to handle) till golden brown and crisp on a medium flame. Take care and keep on turning the okra so that they get fried evenly. If the oil becomes too hot, you could lower the flame and fry.
  • Drain on paper or kitchen tissues.
  • Serve them directly as they are or if you want you could garnish them with coriander leaves, julienned ginger or sliced green chilis. If you like you could also sprinkle some lime juice on top of the crispy bhindi. You could also sprinkle some kala namak or chaat masala on the crispy fried bhindi.
Note:

The oil should be hot, otherwise the okra will absorb oil and become soggy and not even look good on the plate. In case, the oil gets over before frying the second batch, add some more oil.

You can alter the spice powders as per your taste. Since I have a homemade garam masala and its very strong, I have added 1/4 tsp of it. But you can adjust the garam masala as per its quality and freshness.

Unnakka Kerala Cuisine( Snack)

Ripe big bananas - 2 nos
Ghee - 2 tbsp
Cashewnuts - A handful
Raisins - A handful
Egg - 1 no
Scraped coconut - 3 tbsp
Sugar - 1 1/2 tbsp
Oil for frying

Preparation Method of Unnakka Recipe

1)Boil the bananas in water.
2)Remove the seeds from the boiled bananas and mash them preferably in a blender.
3)Heat ghee and fry the cashews and raisins.
4)Scramble the egg in the nuts mixture.
5)When egg is done, add the scraped coconut and saute.
6)Add sugar and turn off fire when the mixture turns golden brown.
7)Make lemon sized balls out of the
mashad banana.
8)Slightly flatten each ball with your palm.
9)Keep a heaped teaspoon of filling in each and roll it like a finger.
10)Fry each finger till golden brown.
