yes eggplant is my stable along with cabbage and salad my Goto meals.
Lunch is usually some kinda salad or soup; otherwise it’s protein shake or smoothie in case I don’t have one in the morning ( greens mainly like celery though will add apples again mainly green ( to have some sweet and sour mix or an orange( because want my calcium and citrus).Dinner is light usually as mentioned eggplant, salads ( lots variety ) cabbage, salmon are my most common meals. in case Indian dishes I enjoy dal ( yellow/orange), paneer, Punjabi curry ( but I’m very mild on the spices and salt( as I don’t want to much sodium). I even limit products with sodium in it as well as carbs/sugar. once a while I splurge and have lamb ( that’s my goto meat ) w/couscous/quinoa instead of salad with my meal. In general I eat a vegetarian meals over non veg ( but nothing todo with religious or other reasons but just a choice).
snacks. I can munch on cucumbers, apples, pickles, celery, all day in case had a choice and be happy 😃 but I know I need variety and healthy meals so I make sure to get that !!
Can you please share your recipes for salads and soups? I wasn't a fan of salads before, but decided to make a salad earlier this summer and I love salads now.
