2. Heat oil in a preheated wok. Lower the heat, add the spice mixture and fry for 3-5 minutes or until the sauce has thickened slightly.
3. Add the prawns and stir-fry over a medium heat until they are heated through but not overcooked.
4. Transfer to a serving dish and garnish with the remaining chilli and chopped fresh coriander. Serve immediately.

Sue, I love prawns, had BBQ prawns at my friend's house recently. Will try this out. Thanks for the recipe

4. Taste and adjust the seasoning. Stir in the whole spirng onion bulbs and half of the sliced green tops. Toss well together and then turn the chicken stir-fry on to a serving platter. Serve garnished with the remaining slice gree spring onions.

2. Heat up cooking oil and saut?FONT> ground paste till fragrant. Add mixed spieces and fry briefly before adding the pandan leaves. Stir evenly.
3. Add thin coconut milk and the cooked mutton. When the mutton is tender, add potatoes and cook till softened. Add in the quartered tomatoes. Pour in thick coconut milk and cook till mutton curry is aromatic.
4. Lastly season with salt as required.

*** Note: Indonesians/Malaysians love to serve this dish with Roti Jala. Kavi... has given the recipe for lacy Roti Jala earlier in this thread. You can use veg. mutton instead to get an equally tasty dish.

Sue, that's how my mom cooks her mutton except the coconut. Will try it out.

2. Heat up cooking oil and saute ground ingredients till fragrant. Pour in half of the chicken stock and cook for 2-3 minutes. Switch off heat and set aside.
3. Heat up a little oil and stir-fry cabbage and onion shreds briefly. Add chicken and stir well. Then toss in noodles and bean sprouts and fry evenly.
4. Add shrimps and fry till cooked and then add ground paste mixture, the rest of the chicken sock, sweet soy sauce, salt and stir evenly.
5.Dish out and garnish with shredded chillies and fried shallots.

IRISH SCONES
Ingredients:
16 ounces self-rising flour
4 ounces butter
3 ounces sugart
milk
2 eggs
5 ounces raisins or currants
1 tsp baking powder
Preparation:
Mix flour and butter together with your fingers until the mixture resembles like breadcrumbs. Add sugar, raisins and baking powder. Beat eggs and add to the mixture. Pour in just enough milk to make the mixture into a sticky dough (not too wet pls). Lift on to a floured board and knead it well. Flatten out to 1/-1/2in in thickness and cut out scones with a biscuit cutter. Place 6 scones on a greased baking sheet and brush tops with a little beaten egg (this helps them to brown beautifully). Bake 15 minutes in preheated oven at 400 deg F.
Note: Enjoy hot scones with butter and jam during your afternoon tea.

BASIC YELLOW CAKE RECIPE
Ingredients
2 cups cake flour
2 tsp baking powder
1/2 tsp salt
1/2 cup butter - softened
1 cup castor sugar
3 large eggs ( at room temperature)
2 tsp vanilla essence
3/4 cups milk
Preparations:
Preheat oven to 350F. Grease and flour two (2) 9 inch cake pans. In a bowl, combine flour, baking powder and salt with a wire whisk. Cream butter and sugar until light and fluffy. Beat in eggs - one at a time. Add vanilla and mix until its well combines. Gradually add flour alternately with milk. At end of addition butter should be smooth. Divide between 2 pans.
Bake for 20-25 minutes. Cool for 5 minutes in pans, then invert onto a rack and cook completely before frosting.
Note: For a 9 x 13 pan - bake at 350 degrees F for30 to 38 minutes.

Muthiya 1 cup grated cabbage
1 cup grated carrot
1 cup grated zuchini
1 cup grated onion
1 cup finely chopped Methi ( methiya keerai)
finely chopped chilles taste
Garlic and Ginger finely chopped
Salt to taste
1/2 cup of flour( usually mixture of besan ( kadala maavu), maida, wheat, ragi and oat flour) see Note 1
1tsp dhania powder
1tsp jeera powder
2tsp ajwain( omam)
1/2 tsp amchur ( optional)
Method
Put all the veggies and masala together Mix well and let it sit for about 15 minutes. The masala and salt would get the water out of the veggies, now mix it with the flour and make sure you make a decent dough( dont put too much flour) . Then take that dough and make long ( neelam) stem kind of structure. Then steam it in a bowl for about 15 minutes. Let it cool. After that slice it. You can eat this as it is or you can spice it up by seasoning it with kadugu, jeeragam, chillies, karuvaipala and yellu seeds. I usually leave it oven for it to become crisper and then season it.
Muthiya is a gujju dish and is used as a tea time snack
Note 1: the ratio of the flour is completely your choice, as long as you dont make it a roti maavu, use as minimum flour as possible.
