Maybe they are trying to prove her to be a complete antithesis in terms of beliefs.

Omkara - Lost faith in love and institution of marriage.

Gauri - Strong beliefs for loyalty and commitment

As for why they made Gauri a 5th pass village girl, maybe its to have her keep some orthodoxy w/o audience questioning her character.
