Chocolate Pound Cake with Tofu

Phew! At last! I have to say I am relieved cos after ages of wanting to use Tofu in my cakes, I finally have done it. Its taken me some serious burst of 'free spiritedness to make this happen. To throw more light to what I am talking about , hop over to Mad's space who came up with this totally mad and absolutely rad idea! Yay girl! Hopefully we will surprise you (and ourselves in the process) with our experiments in the coming months :). This months theme was to make an Eggless version of the more popular Chocolate pound cake with each of the FSB members opting for different substitutes. I chose Tofu.. My advent towards something new has always been a painful path - for the onlookers more than for me. I do research - enough to compete with that of scientist in a lab. I sit and mull over grocery aisle of handful of shops to see what kind of ingredients I can choose. I make lists and lists of notes. The end result is mostly in the extreme - a total bomb or a super duper high flyer! My husband is like - "why can't you just throw few things and make it now already", types! Err...except one small hitch in that plan Mister - that would make me a sane wife ;)!! Don't think you are THAT lucky ;). Well, can't really blame him - I do suffer from OCD (there you go - I said it!). I sometimes wonder if I like to make lists and research recipes/ingredients more than cooking!

Eggless Strawberry Icecream

I never thought I would say this but "Maaan! Is Ice Cream delicious or what?" Well, I am no connoisseur when it comes to these frozen goodies but I have liked the ones I have made till now and couple other store bought ones. The Cheesecake Icecream was sublime and this ice cream made with fresh strawberries in the peak of its season was extremely addictive. Ever since I was gifted the ice cream maker, I have been trying the recipes from the booklet one by one to extremely satisfying results. This is the second one I tried and we loved it immensely.

The summer is at its peak and it has been very hot in my side of the world. So hot that even if I move an inch I start sweating. I have never been a fan of summer. It makes me irritable. I spent my growing up years in the humid and hot climate of Southern India and lamented my way through it. Marriage moved me to a new country and a new place where the climate was such that it made me feel as if I had reached heaven.It rained almost the whole year and I scoffed at those who told me I would be depressed cos of all the gloominess thanks to the overcast skies. I had a gala time there and still miss that place. Though the current climate is not close to the ones of the blazing India, I find it uncomfortably close and hence ice cream is my only respite.
