Maybe the case is that 'first touch' of the PERSON CONCERNED...
As in ur question ...if its the same snitch Oliver wood used for practice..then HIS first touch will be recognized by snitch as by hands..& Harry's first touch will be by mouth. & since Harry intended & tried to open it by his connection to it...it responded to HIS first touch :)
Hope this make some sense lolz
