Interesting facts about Akbar and his cuisine!

Although alcohol was categorically prohibited for the general public during the Mughal Era, the Mughal sultans and nobility nevertheless saw no reason to follow this rule. Akbar had a penchant for bhaang. Like him, both his sons Daniyal and Murad enjoyed alcohol, perhaps a little too much, since they both died young from excessive drinking.

The mughal era saw the appearance of sweets that bear a closer resemblance to dishes that we are now familiar with. The emperor Akbar is said to have popularised falooda which was also said to have been his favourite drink. The court also relished a kind of cold kheer made from rice flour that was boiled with sugar and flavoured with rose water. Also, with the help of the ingenuity of a certain gifted bawarchi under Akbar and of course the ice brought from the Himalayas by runners, kulfi came to be invented in the Mughal kitchens through a process of freezing a spiced mixture of khoya in sealed conical moulds.
