My earliest memories of food I

Being a Sindhi,I love eating Sindhi delicacies cooked by my mother.I am very fond of her dal pakwaan,Sindhi kadhi and Sai bhaji.

My favourite dish I


Bombay duck curry made by my wife Gauri.

My lunch comprises I


Chicken,dal,subzi,rotis and salad.I try to avoid rice.

After a tiring day at work,I prefer having I


A cup of green tea.It refreshes and energises me instantly.

Most romantic dinner till date I


Was in Koh Samui,Thailand with my wife Gauri.We had delicious food and wine in a very charming surrounding under the moonlight by the sea.

One dish I can make well I


Egg bhurji.

A sweet something I often crave I


Kaju katli.I do not have a big sweet tooth yet I indulge in it at times.

When hosting a party at home I


I prefer having chicken dishes on the menu.They are a favourite among all non-vegetarians.

My favourite roadside dish I


All kinds of chaat including pani puri,sev puri and bhel puri.

One thing I miss most from my moms kitchen I


Is the way she uses spices and the kind of food she makes.Its simply unbeatable.


BOMBAY DUCK CURRY



INGREDIENTS


Bombay duck fish (cut into 2 pieces each): 8 I Garlic cloves (finely chopped): 10 I Ginger root (finely chopped): 1 inch I Green chillies (coarsely ground): 2 I Onions (sliced thinly): 2 I Cumin seed (for seasoning): 1 tsp I Green cardamoms: 4 I Cinnamon stick: 1 I Bay leaf: 1 I Whole dried red chillies: 2 I Mustard oil: 3 tbsp I Salt: to taste I Turmeric powder: 1/2 tsp I Coriander powder: 1/2 tsp I Red chili pepper: 1 tsp I Coriander (finely chopped): for garnishing

METHOD


Wash,pat dry and apply salt and turmeric to the fish pieces and keep aside for 15 minutes.Heat mustard oil in a flat non-stick girdle.When smoking,add dried red chillies,whole spices,cumin seeds.Let it splutter.Add sliced onion.Cook for two minutes.Add ginger-garlic-green chilli mix.Fry well for two minutes on high flame.Add the spice powders and 4 tbsp of water.Move the spice mix to the side of the pan.Add the fish pieces to the same pan.Reduce flame to medium,and allow the fish to cook in its juices for five minutes.With a spoon,spread the cooked spice mix over the fish.Add a cup of water.Let the fish cook in the gravy for five minutes.Do not stir too much or the fish pieces will break.Add 1 tsp of lemon juice.Garnish with chopped coriander leaves.Remove from flame.Serve hot.This curry tastes best with rice.
