The fact is apart from Kidnapping, Akash did not even rised his voice on Ansh and he fed him with good food, sweets etc which are Ansh's favourates. Ansh is such a sweet boy , he even liked Prashant even after knowing that he tried to take Ansh away fro his mother. So there is no wonder he calling Akash good uncle.

and his sis as his own after the debate competition and Mumbai yatra.
he acts as their responsible brother

Ansh is just like luv kush from ramayan and yash is like rama. rama was always forgiving even to sinner like manthara and luv kush too were raised by sita in ashram to be forgivibg.
