Well that's coz Saif is already an established actor. He's given award winning performances in the past, so its not big a deal that he gave a great performance in LAK.
For Deepika, since she's a new comer, it was an improvement from her earlier performances so obviously its gonna do more for her than for Saif.
Infact, its harder for saif to impress the audiences since in order to become "his best performance" he woudl ahve to top Langda Tyagi in Omkara and Shekhar in Parineeta...thats a lot harder than to top Bachna Ae Haseeno or Om Shanti Om's performance for Deepika.
