You are so fast in writing....It took me hours to think what my ingredients and their measurements were and then the procedure part....

Yes Tulsey I had shared this recipes with my friends on IF and other forums...Plus with personal friends via email...I keep my recipes in Word recipe folder so I have easy access to it...I have more which I will find and post later...😃 You have posted some awesome recipes too...👏
One major tip never use Gits pkt for gujarati Khaman dhokla..I make my yellow Khaman from scratch...I have recipe which I will post later..I don't like how some Gujjus make these dhokla with besan flour...Might be an easy and shortcut but taste wise my homemade from dough turns out superb...So look out for both Khaman & White dhokla recipes..😃
I personally believe in sharing..Although two people follow same recipe it still will have lil personal touch to it..I am open abt sharing..Many don't like to give out recipe as they feel someone will become better than them 😲😳 For MOI more the merrier..
I wish my hubby would cook atleast when I am sick..All he will make me is tea, boiled eggs and toast...He cant even open a can of tomato soup and serve 😭 But we have understanding I cook and he cleans up so it is fine by MOI...No gripes from MOI 😳

My mom used to make this and store it in a big air tight glass jar. We used to take one with a glass of milk.....

I had taken the recipe from my mother when Monica was only 5 and continue to make the laddus atleast 4 times in a year. I have reduced the size of the ball and crush the dried nuts. This gives all the taste and is calorie-wise.

Dry Fruit Laddus (good for breakfast on the run)

Ingredients: makes 12 laddus

1 cup Jaggery (I use brown sugar)

cup dry Coconut (I use desiccated coconut)

cup water

2 tsp ghee

1/8 tsp Nutmeg powder

1/8 tsp Cardamom powder

1 Date cut into tiny pieces

1 tbsp Raisons

1 tbsp edible Gum

2 tbsp Cashews chopped into small pieces

2 tbsp Walnuts chopped into small pieces

2 tbsp Almonds chopped into small pieces

2 tbsp Poppy seeds (khus khus)

Procedure

In a wok like kharahi, dry roast coconut till it turns slightly brownish. Take it out on a clean plate

Heat ghee and add edible gum. The gum puffs up like small balloons. With a spoon take out on a plate leaving behind any remaining ghee in the pan.

Add the cashews, almonds and walnuts. Fry till they start to turn brown. Add poppy seeds and fry till they pop.

Add raisins and dates and fry for few moments. Take out on the same plate that has the gum.

In the same kharahi (wok), add cup of water and jiggery and cook till it forms into a syrup. To know whether the syrup is done, take some water on a plate and put a drop of syrup in it. If it turns like a crystal, syrup is done.

Add all the fried ingredients and mix well. Add nutmeg and cardamom powder and mix well.

Make laddus (round balls) half the size of besan laddus when the mixture is still warm. Aply some ghee to palms before trying to hold the warm mixture. If the mixture dries out, sprinkle some water and heat it for few seconds.

PS..if you are calories conscious, reduce the ghee quantity and use just enough to fry the ingredients.

Add all the fried ingredients and mix well. Add nutmeg and cardamom powder. Mix well.
Make laddus when the mixture is still warm. Apply some ghee to palms before trying to hold the warm mixture. If the mixture dries out, sprinkle some water and heat it for few seconds.

So true, my brothers never came near the kitchen and my mom spoiled them so much that either she served them meal or made me do that.
Today, they have been married more than 10 years and they even know how to make aata and roll roties....my older bro even does excellent baking and my younger bro makes delicious meat dishes. they even clean after their mess. the bhabi's come home to eat ......😡

I have noticed some Punjabi, Maharashtrian and Bengali men love to cook...Not the case with most Gujjus...Actually they can be best cooks if they try...But we know they won't....So let them clean the dishes..Fair deal...When we entertain I cook, and he is the bartender as he loves making drinks...😛

OK Here it is...Tulsey @ your request
Khaman Dhokla Recipe

2 cups chana daal
1 cup moong daal

*Once the batter is fermented, add salt to taste, green chilly and ginger paste. Sugar (Optional)

*Before steaming the batter, add Eno salt, Fresh lemon juice in 2 Tablespoon of water and add this in the batter and mix it properly. You have to do this per thali..(Ea Batch)

*Grease the steel thali with oil and pour the batter in the greased thali and steam it for 10 - 15 Minutes.
