Dosa Dough-Mix Recipe

5 measurement of Rice Flour set it aside
1 measurement of urad daal with handful yellow mung daal. Wash and soke these 2 daals together in a container for atleast 6-7 hours.

Blend daal with bit luke warm water so mixture gets really fluffy. now mix water in rice flour to a thicker consistance and add blended daal mixture to it. Use your wonderful clean hand to mix the mixture. Do not use spoon. Add salt to it.

Keep it over night or required time in large container inside the oven just with the light on for fermantation. When it is fermanted stir it well with hand clock wise and put it in plastic container inside fridge for 24 hrs b4 you are planning to make.

Pull out your dosa tava or skillet and make and eat them. Yum Yum.

Make sure you know how to make sambhar, red chutney and green coconut chutney too. Enjoy!!!!!!!! 😃

Mmmmmmm! recipes dekh kar hi muh mein paani aa gayi.😃 all of them must be delicious.........i will surely try these at home, at least some these.😉 thanks to everyone whoever posted these recipes.🤗

Red Chutney Recipe
1 big Red Bell Pepper chopeed into 1/2 inch cubes,
Or
10 Red Jalapeno Peppers chopped in smaller pieces,
5-7 Some Red dried chili pepers to your taste .
1/2 cup Chanadaal,
1/4 cup Urad daal,
1 tsp Jeera,
1/2 tsp mustard seeds,
1 tsp whole dhania seeds,
1/2 tsp Methi seeds
1/2 cup to 3/4 cup yogurt
Oil for saute all ingredients
Salt and sugar to taste
Water if need in blending
Put oil in large skillet, add all the ingredients, let it brown and saute until daal turn goden dark brown and peppers are roasted. let it cool down add little water to soak for 2-3 hours..
Now in blender 1st add Yogurt and add all roasted items from skillet. Blend it well. Add little water if need be for blending chutney to right consistance. Enjoy.!!!!!!
Green Coconut Chutney
1/2 coconut fresh cut up or frozen 2 cups
2 bunch Cilantro-Fresh dhania leaves chopped
Serrano chillies abt 10-15 chopped
1" piece chopped ginger
1 big tblsp whole roasted Dhania seeds
yogurt
salt, sugar to taste
Tadka
Ghee for Tadka
Mustard seeds
Jeera seeds
Hing
Fresh kadi patta
In blender first crush whole roasted Dhania seeds, now add yogurt and rest of chopped ingredients. Blend it well to the chutney consistancy. If need add more yogurt or bit water. Remember coconut does soak up water and yogurt too so it is better to have a loose consistancy.
Now do the Tadka with ghee by adding Mustard and Jeera seeds and kadi patta with Hing. Enjoy!!!!!!!
These 2 goes well with Dosa, Idli or Medu Vadas...😃

Gujarati Muthiya
You can use abt 1 cup of Shredded cabbage, Fresh chopped Methi, Grated Opo Squash (Dudhi), Zuccini, Spinach or Cilantro if you don't have any of these other veg.
1 cup left over rice or khichadi (separate it loosen it up)
2 cup wheat chapati flour
1/2 cup suji
1/3 cup white or yellow corn meal
2 TBSP besan
2 TSP Methia Pickle masala dry (Indian store has it) Gujjus use them alot (Laxmi or Nirav brand)
Salt to taste
1 Tsp Sugar
Red chili power to taste
1 TSP Turmeric
1 TSPGaram Masala
1/4 Tsp baking power
4 TBSP oil
now make into dough with yogurt and little bit of water. It has to be real soft where u can make it into big long rolls
Now take a container where u can steam this muthiyas.
I use big cooker fill it up abt 2 inches of water. Put metal ring which is used for Dhokla thali to stay on
Spray Pam on to flat colander (Indian)
Roll muthiya and individually put them side by side in the colander
put colander in cooker, It should stay just on top of the cooker not submerge into water and make sure colander does not touch water level. It needs to be steam cooked. Cover the top. Steam cook it for abt 15-20 minutes and check with Fork to see if it is done. By poking fork if it comes out clean it is done. Let it cool down.
Cut them into small round pieces.
Now in new pot or wok put abt 3-4 tbsp of oil for Tadka
Put mustard seeds, jeera, big red chili, once it starts popping add sesome seeds (Alot) add fresh curry patta and Hing.
Now add the cut up muthiyas and stir fry it for abt 5-7 minutes
Garnish with fresh cilantro and dry grated coconut
Eat it with green chutney and Wonderful cup of tea.

Handvo Recipe
Special Tips..
I make handvo from scratch or Handvo flour....Which requires fermenting it over night....I normally dont use Gits handvo mix....But follow this recipe and u should be OK...
When I don't have enough methi what I do is add little of Pickle masala - Methiya mix and substitute with lots of chopped spinach and cilantro...Also handvo comes out really soft-moist if u can add left over cup of khichadi or rice into the better when u bake it...
2 cups rice
1 cup toor (arhar) daal
1/4 cup each of urad, split green moong dal,chana dal
1 cup of sour yoghurt
2 1/2 cups grated white pumpkin, Zuccini, Cabbage, Methi leaves, Spinach...available
6-7 tbsp oil (though 3-4 works for me)
juice of 1 lemon
2 tbsp sugar
chilli powder to taste we use 1 1/2 tsp
1 tsp Eno fruitsalt
1/2 tsp turmeric
1 1/2 tsp ginger paste
1 1/2 tsp chilli paste
1 tsp Garam masala
salt to taste
Kadi patta-Limdo
You could add Garlic if u like...

Wash all the grains and soak them together for 4/5 hours. Drain and grind in the blender to a grainy paste ( i feel this give a nice texture) add the sour yoghurt and leave overnight. the next morning add the remaining ingrediantc and mix it all up well. Pour into the greased tin or baking dish,
For tempering
1 tsp mustard seeds,
1 tsp jeera seeds
Enough sesame seeds
kadi patta
in about 4-5 tsp of oil and pour this on top of the handva mix. bake at 300 for 30 - 35 mins watching closely the first time. when done the crust should be a golden brown. You can use rectangle pan or some use non stick muffin baking dish to make individual handvo pieces...
