Chocolate Layer Cake
Ingredients
340g butter softened
340g sugar
6eggs
340g all purpose flour
120g finely ground almonds
6 tablespoons unsweetened cocoa powder
2 teaspoons vanilla extract
1/2 cup boiling water
Ingredients for frosting
6 tablespoons (80g) butter
200g sweet chocolate (if can use 27-60%cocoa)
2 eggs
200g icing sugar
Preheat oven to 350degree. Beat soften butter with sugar. Add one egg at the time, mix well between each egg. Mix with flour, cocoa powder, baking powder, vanilla extract, and finely ground almonds. Add 1/2 cup boiling water and mix well. Get ready 2 cake trays, possibly 23cm with greeseproof rub on it. Transfer the mixed items into this 2 trays equally and bake at 350 deg (30-45mins). Try to use tootpick to prick in the middle to see if the crumbs are moist. Do not overbake it pls.
Cool the cakes and cut in half horizontally. Much easier to cut if u keep in fridge for few hours.
On the frosting ...
Melt butter and chocolate in a double boiler. Beat the eggs with icing sugar and mix with the chocolate and butter mixture. Use two third of the frosting to sandwich the four (or two) layers together and coat the cake with the reminder of the frosting. Cool the cake in the fridge to harden the frosting.
If u guys want, u can use coffee or tea instead of boiling water. If you want a smaller cake, use half the amount the in mention ingredients. But make sure its 2 layer.

Hiya folks, Deepavali is round the corner and I thought of making murukku for the first time in my life (actually, I have hardly made any dessert items ever). Does anyone have any good recipe; I am planning to use a packet of Baba's ready-mix but it would need some embellishment. Cheers, Bonheur
