In the case of the latest menu, I was surprised that any of them even knew avial. Though a traditional south Indian dish, it is not one you will find in hotels but is MUST at marriages.
I think the chefs give them ideas otherwise to an average north indian, south indian cuisine is limited to idli vada dosa and sambar . Saying words like thoran was silly as to any outsider, it is just sabzi
I thnk d same..and I doubt even recipe is provided...else how can dey all knw how 2 cook avial and sambar...
