Ghee rice is very famous in Kerala, especially North Kerala. Usually had with chicken dishes

Maida must have been used so that they can roll out the roti. Akki roti with just rice flour is quite sticky and so you can only pat in in your hand or put on tawa and spread (this takes longer as after each roti is made, the tawa has to be cooled)

Is it served as a dish, bulls???😕... in tamilians, we never serve it as a dish, we put hot rice and serve the ghee on top of it... some prefer it and some dont...😕... thanks for the info...!

Ghee rice we (south Indians) don't consider as one item .Coconut rice,lemon rice tamarin rice and venn pongal we consider as rice items.

In south India, we do make Rotis with Rice flour but that is tricky. We have to use warm (rather hot water) to knead the flour so that it doesn't give away while making roties. So she was clever enough to add some maida, so that it binds rice flour but taste will not be the same. Still OK. Both teh teams were making roties and in south it is more famous to add a spicy chatni (made out of coconut,). I could not see the plain rice from either of the team but both teams had prepared sambar (for what?)
However rather than discording the entire batter, they could have mixed enough qty. of souji and prepared soji dosa or utthappam. Or they caould have added some suger which binds and allow the appam to come out well.

Maida was added so that rotis doesnt break while removing from the tava and as these roties are to be fried on both sides.
