The thing with Shiv is, Mahi doesn't really put on a facade in front of him... She doesn't feel the need to basically, she is just her 'comfort food eater sarcastic self' around Shiv, and he accepts her just the way she is, quirks included. On the other with Ishaan, Mahi feels the need to dress up, and order for a Ceasar salad, instead of that pizza she craves. I think somewhere because she admires Ishaan so much, she isn't able to be herself around him... She is ultra-polite and self-conscious, even when Ishaan tries to make her comfortable. Which I think says a lot, because for a successful relationship you need that basic comfort level, though its granted that you would obviously have to develop it as the relationship progresses. And she doesn't have that with Ishaan at all, even when he tries to keep her at ease, she is unable to be herself around Ishaan, she thinks like a million times of what should she say to him to impress him...
On the other hand Shiv is ONE person Mahi speaks her mind to, like that is evidenced in the Gol Gappa scene itself IMO, because while Mahi is usually accustomed to hiding her thoughts in the office and not lashing out at Mona & Sona when she wants to... With Shiv, she speaks her mind without any worries or tension. And Shiv gives it back to her... He too speaks his mind to Mahi, without any sort of qualms.
As for Shiv not appearing much in the episodes, I think its kind of realistic really... I mean I guess the producers want to establish Mahi and his characters first and build-up to the main story, instead of rushing through it, which IMO they're currently doing with Mahi and Ishaan (which makes me think that there is definitely some ulterior motive to the date from Ishaan's side as to how he developed an interest in her so quickly) .
