Firstly, I think the girl playing the character needs to tone down a bit. All this while she has been playing this haughty princess and she has become a pro in it. In the scene with her sister too I felt that she needs to tone down.
Secondly, I agree when you say that Jodha knows how she is behaving with Jalal. Its as they say 'A woman knows!" This could be a defense mechanism trying to stop herself from falling for the man who has a "dil" inside of him. I am not trying to justify her behavior. Just saying that she might be doing it purposefully.
Thirdly, it takes time. This girl has been hating the Mughals like forever. It is only recently that she has realised that her husband has a dil. That he is sensitive, he has a sense of humour. She is just understanding him. It takes time for her to control her outbursts.
As you said she knows how to behave when others are around. She behaves as if she respects him. Its only when they are alone that she can be her true self. Give her some time. She will be alright.
And why is Jalal behaving like a hen-pecked husband? Because he is in love. He is in love with this haughty princess who has a mind of her own, who doesn't think twice to speak her mind, who is independent and is the only one among all his other begums who can say NO to him. That appeals to him. Well, men and their likings!! What can you say? 😆
The only time I would get very upset is when Jodha would take this behavior outside if front of the whole world and when she insults her Shahenshah in front of everybody. Yes, she needs to cut down her insults especially when Jalal has been all but accomodating but that is because he is seeing her in a new light. But Jodha needs to cross that line and when she does, its all going to be lovey-dovey.

I understand what you are getting at & I sincerely hope you are right in this case.
But I am prejudiced because it is a Balaji show and I am afraid they are thinking Jodha is just another Parvati, Prerna and Tulsi. I hope they realize they are dealing with a historic epic love story and they need to balance the characters. Why is it so difficult for the CV's?
The movie made Akbar really soft but Jodha's character was perfectly balanced. She had the pride, honor, respect, dignity and the personality of a princess and a queen and she carried herself perfectly but here it is always a avatar of Ma Kali!
And yes this Jalal became soft too suddenly and is falling for a spoiled brat of a princess just because she keeps rebuking him. I don't give him an open carte blanche to his atitude and behavior but at least he is trying to be understanding seeing through his faults and even is genuine when he is appreciating something but they are making Jodha rude to unthinkable extent. Today he didn't say anything insulting in a taunting manner but her last retort of 'tedi soch' was uncalled for.
And once she has endangered her husband's life without any remorse later and now again she will challenge him to put his life on the line without even a second thought. I hope the promo is wrong but the way she came across to him undermining his valor and courage challenging him...again totally unwanted.
Will watch till its lovey dovey and then I will be out as usual. To me you know the journey to love is important and interesting and intriguing but once the love is out in the open I am done! Yes sadistic of me, isn't it? 😉
And I won't be surprised if Jodha here does openly rebuke or insult Jalal. Many a times she starts of with her opinions in front of any one, Ruqaiya stopped her and even told her to learn to hold herself and learn when and where to say something, Jalal stopped her on their way to Ajmer when that man came to kill her. Being a princess she ought to know when to hold her tongue and when to open her mouth.
So for your sake will give her a benefit of doubt. She can have a grudge and hate Mughals but knowingly she married him for Amer and now she can't pass the buck all on to Jalal.
