I think the term 'Perfectionist' was coined around Lagaan time.

And it is based on amount of time, efforts and hard work he puts into his project. Minute details in getting the result perfect. From Hair styles to adapting character look. He goes lengths to look part of the character. Look at the wide range of characters he has played and has done justice to. Rangeela, Sarfarosh, Lagaan, RDB, TZP, Dil Chahta hai, Fanaa, 3 I, Mangal Pandey, Ghulam. He, Madhvan and Sharman drank beer and shot to make drunken friends scene appear real on screen.

Now, actors that you mentioned also work hard on their craft. But they are not mainstream. And they came much later than Amir started.

In fact, Amir was the one who started the whole making the character look real. Working on character trend in BW since late 90s. That is when media started calling him Perfectionist. Coz no other mainstream actor paid that much attention to looking like their character in their movies.
