I dont think they intended to highlight the character change in Preeti, it was done only to bring out Amita's feelings and Preeti was merely a medium to do so as Jigna is already against Amita's assumptions which leaves only Preeti ...And like u guys mentioned, its probably to do with Sanjay as well...

i was so shocked to see her in today's episode when she was getting angry at Amit in the kitchen..i was just like😲 she was so aloud...what happened to her soft-sweet voice...😕
