I totally get where you are coming from in reference to your own personal experience. These things do take time and people get married a second time for different reasons. Also, it is not even necessary than you end up loving your second spouse as much/more as your first because it differs from person to person. But what is important to remember is that PV is a fictional story for one thing and also mainstream entertainer and so it cannot be entirely realistic in terms of time frame. It simply would not be entertaining to watch because as audience, we need something to be happening constantly, whereas in real life a single status quo might exist for months or years before something changed. Also, since Yash and Aarti are the leads of the show, people are rooting for them to fall in love. That is the nature of how people relate to a story, rather than to real life, where you can't isolate who the "leads" are because there is no such thing as a contained story. Even with the kids, Palak's insecurities would have taken a lot longer to go away, but they dramatised it to speed up the process. So far, I personally think they have been pretty good at showing all the right transitions, only speeding them up for dramatic effect which is necessary to keep the plot fresh.
Finally, I disagree that Yash has forgotten Arpita. I think the fact that he still had her picture and her things in his wardrobe is testament to the fact that she will always have a place in his life and his heart. He will always love her. And that doesn't interfere with him loving Aarti or vice versa because Aarti is not taking Arpita's place, but making a place of her own beside Arpita and is happy to share Yash's heart with her memories. Yash is just no longer making his whole life about Arpita, which is healthy for him, his kids and for Aarti. So I do see where you are coming from, but I think the CVs have pretty cleverly managed the real life transitions within the framework of a fictional narrative that has to keep moving to keep the audience hooked.
