Mother's Day History

Contrary to popular belief, Mother's Day was not conceived and fine-tuned in the boardroom of Hallmark. The earliest tributes to mothers date back to the annual spring festival the Greeks dedicated to Rhea, the mother of many deities, and to the offerings ancient Romans made to their Great Mother of Gods, Cybele. Christians celebrated this festival on the fourth Sunday in Lent in honor of Mary, mother of Christ. In England this holiday was expanded to include all mothers and was called Mothering Sunday.

In the United States, Mother's Day started nearly 150 years ago, when Anna Jarvis, an Appalachian homemaker, organized a day to raise awareness of poor health conditions in her community, a cause she believed would be best advocated by mothers. She called it "Mother's Work Day."

Fifteen years later, Julia Ward Howe, a Boston poet, pacifist, suffragist, and author of the lyrics to the "Battle Hymn of the Republic," organized a day encouraging mothers to rally for peace, since she believed they bore the loss of human life more harshly than anyone else.

In 1905 when Anna Jarvis died, her daughter, also named Anna, began a campaign to memorialize the life work of her mother. Legend has it that young Anna remembered a Sunday school lesson that her mother gave in which she said, "I hope and pray that someone, sometime, will found a memorial mother's day. There are many days for men, but none for mothers."

Anna began to lobby prominent businessmen like John Wannamaker, and politicians including Presidents Taft and Roosevelt to support her campaign to create a special day to honor mothers. At one of the first services organized to celebrate Anna's mother in 1908, at her church in West Virginia, Anna handed out her mother's favorite flower, the white carnation. Five years later, the House of Representatives adopted a resolution calling for officials of the federal government to wear white carnations on Mother's Day. In 1914 Anna's hard work paid off when Woodrow Wilson signed a bill recognizing Mother's Day as a national holiday.

At first, people observed Mother's Day by attending church, writing letters to their mothers, and eventually, by sending cards, presents, and flowers. With the increasing gift-giving activity associated with Mother's Day, Anna Jarvis became enraged. She believed that the day's sentiment was being sacrificed at the expense of greed and profit. In 1923 she filed a lawsuit to stop a Mother's Day festival, and was even arrested for disturbing the peace at a convention selling carnations for a war mother's group. Before her death in 1948, Jarvis is said to have confessed that she regretted ever starting the mother's day tradition.

Despite Jarvis's misgivings, Mother's Day has flourished in the United States. In fact, the second Sunday of May has become the most popular day of the year to dine out, and telephone lines record their highest traffic, as sons and daughters everywhere take advantage of this day to honor and to express appreciation of their mothers.

Mother's day Recipes

Cook Your Mom a Meal to Remember!!!

4 English muffins, split
Butter, softened
8 sl Canadian bacon, cooked
8 Poached eggs

ORANGE HOLLANDAISE SAUCE

2 c Fresh orange juice
1 c Unsalted butter
1/2 ts Salt

Spread cut sides of muffins with butter. Broil until lightly browned. Place a slice of Canadian bacon on each muffin half; top with poached egg, and cover with Hollandaise Sauce. Serves 4. Orange Hollandaise: Place the orange juice in a saucepan and bring it to a boil. Reduce the heat and simmer until it is thick and syrupy, 10-12 minutes. You should have 1/4 cup syrup. Set it aside. In another saucepan, melt the butter in a thin stream. Process a few more seconds, until thick. Serve immediately. Makes 2 cups; serves 4."

4 Eggs
2 tb + 1 ts sugar
1/2 ts Salt
1 c Whole milk
1/4 ts Vanilla extract
12 Thick slices of bread
Butter
Powdered sugar, optional
Brandied Lemon Butter:
1/2 c Butter
1 c Sugar
Juice of 2 lemons
4 ts Grated lemon rind
3 oz Brandy

In a shallow dish, beat eggs, sugar, salt, milk and vanilla.

Soak bread in the above mixture.

Heat butter over medium high heat and cook each slice of bread until slightly brown on each side.

Serve with brandied lemon butter and lemon slices. Sprinkle with powdered sugar, if desired.

For Brandied Lemon Butter:

Melt butter over low heat. Spoon off any foam that forms.

Pour into a dish, leaving behind any sediment in the pan.

Wash pan, pour butter back in the pan and add the sugar. Stir constantly until sugar dissolves. Add lemon juice, rind, and brandy; stir until smooth.

Pour over hot french toast.

2 c Flour; Unbleached, Sifted
1/2 c Cocoa; Baking
2 1/4 ts Baking Soda
3/4 ts Salt
3/4 c Shortening; Vegetable
1/3 c Sugar
1 1/2 c Corn Syrup; Dark
3 ea Eggs; Large, Separated
1 1/2 ts Vanilla Extract
1 c Coffee; Cooled

Preheat oven to 350 degrees F.
Sift together the flour, cocoa, baking soda and salt; set aside.

Cream together the shortening and sugar in a mixing bowl until light and
fluffy. Blend in the corn syrup and egg yolks. Beat in vanilla.

Add dry ingredients alternately with coffee to creamed mixture, beating well after each
addition.

Beat egg whites in another bowl until stiff peaks form; fold egg whites into cake batter.

Pour batter into a greased 13x9x 2-inch baking pan.

Bake for about 45 minutes or until cake tests done.

Cool in pan on rack.

    1/3 c dry bread crumbs 2 ts parmesan cheese -- grated 3/4 ts Italian seasoning 1/2 ts garlic powder 1 lb chicken breasts without skin 1 egg -- beaten 8 oz tomato sauce
  • 3/4 c mozzarella cheese -- shredded

Combine bread crumbs, cheese, italian seasoning, and garlic powder in a shallow bowl.

Dip each chicken breast in beaten egg, then roll in bread crumb mixture to evenly coat.

Place chicken on a cookie sheet or jelly-roll pan.

Bake in preheated 375F oven for 10 minutes. Turn chicken over; bake 10-12 minutes or until chicken is thoroughly cooked.

Spoon tomato sauce over chicken. Sprinkle cheese over top. Bake 3 minutes or until cheese is melted.

For Vegetarians

Vegan French Toast

This vegan french toast recipe uses bananas instead of eggs, giving it a sweet flavor. I like to use a thickly sliced whole grain bread, but this recipe works well with just about any kind you choose.

INGREDIENTS:

    2-3 ripe bananas 3/4 cup soy milk 1 1/2 teaspoon cinnamon 1 teaspoon pumpkin pie spice (optional) 1 teaspoon vanilla bread, any kind is fine
  • butter or margarine

PREPARATION:

Blend bananas, soy milk, cinnamon, pumpkin pie spice and vanilla in blender or food processor and pour mixture into pie plate or wide dish. Gently dip bread slices into the mix, coating both sides. Fry in butter or margarine in medium-hot skillet until golden brown.Serve with maple syrup if desired

Pumpkin Scones Recipe

INGREDIENTS:

    1/2 cup sugar 3 1/2 cups flour 2 tsp baking powder 1/2 tsp baking soda 3 tsp ginger powder 1/2 cup margarine
  • 2 cups pureed pumpkin

PREPARATION:

In a large mixing bowl, combine dry ingredients (flour, sugar, baking powder, baking soda and ginger). Cut in margarine, adding a bit at a time until mixed. Add pumpkin and combine well.

On a lightly floured surface, knead dough a few times, pushing it into a large circle, a few inches thick.

Cut into 12 or so triangular pieces. Imagine you are cutting a pizza so that you get even, triangular slices.

Bake at 425 degrees for 12-15 minutes, or until done

OLIVES AND LENTIL SALAD
Enjoy this delicious salad!
1 cup green lentils, rinsed and soaked for half hour
1/2 cup pitted oil cured black olives broken into pieces
Note: The only way to pit these wrinkled olives is by hand. Try rolling them between your fingers with some pressure to break the pit from the flesh, which makes it easier to rip them apart.)
2 Tablespoons capers
1/4 cup chopped fresh oregano
1 peeled and chopped garlic clove
1/2 cup chopped parsley
5 Tablespoons lemon juice or juice of one lemon
1 Tablespoon extra virgin olive oil
Place drained lentils in a saucepan. Cover them with three inches of cold water. Bring lentils to a boil, cover the saucepan, and simmer for 30 minutes. Drain water and set lentils aside. Mix together olive pieces, capers, oregano, garlic, parsley, and lentils. Mix lemon juice and olive oil into a dressing with a pinch of salt and pepper to taste, and drizzle on the salad. Serve with warm, crisp bread. Quick Vegetarian Spaghetti

INGREDIENTS:

    1 pound uncooked 1 cup florets 1 (15 ounce) can whole kernel corn, drained 1 cup fresh sliced mushrooms 1 cup sliced carrots
  • 2 (8 ounce) cans tomato

DIRECTIONS

  1. Bring a large pot of salted water to boil, add spaghetti and return water to a boil. Cook until spaghetti is al dente; drain well.

  • Combine broccoli, corn, mushrooms, carrots and tomato sauce in large sauce pot. Cook on medium heat for 15 to 20 minutes or until vegetables are tender. Stir occasionally to keep sauce from sticking. Serve sauce over spaghetti
