Try this recipe for cracked wheat. My addition to it is olives. I usually add in a can (about 400 ml) of pitted black or green olives. Put in half just before you finish kneading the dough (so that they break up) and put in half once you put it in a bowl to rise. This way you get olive flavour throughout the bread but also pieces of it in your mouth.

I can also share some cookie recipes if you like this. I make a nice oatmeal chocolate chip cookie. Both this and the cracked wheat bread are healthier options than the regular style, hence why I like them better.

Oh this looks wonderful. ❤️

I absolutely love making it as well. The crunchy pieces of cracked wheat (dalia) in your toasted bread is so refreshing. I tried it on a whim when we stopped finding it in stores and now my dad refuses to eat store bought. It doesn't matter how much work I'm doing, every few weekends I have to make a couple of loaves of cracked wheat bread.

Here's my recipe. A colleague at one of my old jobs gave me her recipe which I have since refined into something that my family and I can enjoy.

Quesadillas with a ton of sautéed vegetables - corn, peppers, broccoli, mushrooms (whatever you have available).

Similarly an au gratin with all the vegetables in your fridge.

A Spanish paella

Vegetable satay (use tofu, mushroom, paneer, baby corn)

All recipes are available online - but if you do me, I’ll send you my recipes (which may not be 100% authentic)

Queasadilla ..that's my fav. Long time since I made..thanks a ton for the suggestions

I live in Spain, so everytime I’m back visiting family and friends in India, I make paella. While I do bring some rice from here, I always run out of it and use any local short grained rice. Just need to adjust the amount of water. It’s not going to be the same thing, but still pretty good.
