Those are meant for critics and serious viewers of cinema. Not for timepass or entertainment seeking viewers anyway.
I remember I would never have watched films like Sparsh earlier. Only after growing up and actually seeing struggles of blind persons in real life I could appreciate script and performance of actors- especially Om Puri and Naseer in Sparsh. They were so real in it and actually got mannerisms of visually impaired persons right.
I remember I never understood why Jaane bhi do yaaron was called best comedy film ever made in history of Indian cinema, because as a kid only David Dhawan-Govinda comedies were my idea of great comedy films. I did not like that film as a teen either. Watched it again in 20s, only then I realised its brilliant satire in it and Om Puri is the funniest character in it despite being the most grumpy, loudest and rudest one.
Good writing, good acting take time, more exposure, experience to appreciate. And such films are real test for any actor and writer. These films prove films are not just made for lowest common denominator among masses but also as craft and an art form. An actor who can perform for the craft and test his limits, prove he can do anything which was unexpected for him and something he never experienced himself is the real deal.
That's why viewers can say what they say. But there is reason why Dilip Kumar is considered greatest actor and got title of Nat Samrat while Dev Anand only got known for style and looks. Dilip Kumar would get into skin of characters. He got accent of UP villagers perfect in Ganga Jumna despite never having lived there.
Sanjeev Kumar did 9 different roles in one film and convincingly played an old grandpa when he was just in his 20s. He also played a mute, deaf man to perfection in Koshish. That is why he is a superior actor while others may have been more popular but never matched his skill.
As an actor Kamal Haasan tests himself and pushes his limits way more than a one trick pony like Rajinikanth. His Padma and National awards at young age are well earned.
Cinema is first an art form, a craft. Not just a trade.
Palak paneer is not as tasty as Pani puri but it anyday has more nutrition than street side junk food which may be more popular. Junk is junk. No matter how popular it is. And good quality stuff may not always be popular.
Popularity of Harry Potter does not make JK Rowling a better quality writer than Shakespeare.
Anyone can do hehehehaha roles or look glamourous. It takes real hard work to get stories and characters right in authentic and serious films. It is no surprise Bollywood has won no international honours and has so few National awards or has to use political connections to get National awards. Bollywood would have even fewer National awards if there was no Hindi film or 'popular entertainment' category. Bollywood can never produce a Satyajit Ray nor win an Oscar in filmmaking like he did.
Too busy catering to business and ignoring the craft.

Also Personally An action stunt where an actor might perish sounds tougher than anything you describe. That just my opinion

Bollywood has always made good movies that are known as Offbeat cinema's, which you turned a blind eye to. Ofcourse the Masala movies make more business that's a different genre, also its the fault of the Indian Jury panel who send more famous actors or directors movie to compete at the OSCARS where there are brilliant low budget offbeat cinema that are not selected to compete.

Thats a very good example, reminds of Govinda who did something similar in HKA but got no awards.
How many actors do their own stunts and take risks nowadays eh?
I think except Akshay I have not heard of any actor taking risks to do own stunts. Most of them use stuntman and body double to do the risky work.
