Pooja( I hope I got the name right ) , it's an interesting discussion and I remembered few more scenes where I felt Sai cared for Virat and have listed below but I disagree with few scenes you listed above. I am not debating over Sai being in love with Virat or not but how she takes him for granted.

I don't believe she is being nice to his family for Virat’s sake. I think she is craving for family love and to call someone as her own. Even otherwise she is someone who helps people selflessly. Virat had identified this trait of hers during the Pari rescue mission. Though I disapprove of her way of forcing trimurthis to college feast she did that so she doesn't feel like an orphan. Even during Virat’s mission, she was saying he is the only family she has. If Sai was not an orphan maybe she would have behaved differently. Even if she was not in love with Virat, she would have done this.
I Don't think Sai did any favor to Virat by going to the DIG office. She said the truth and she stood by the truth. She went out of her way to do it but it was the right thing to do especially after what Virat did for her.
Like I said in the beginning, it's not about whether she loves him or not it's about taking him for granted. She may have feelings for him I don't deny that. Here are few occasions where she prioritizes other things over him
1. Ruby pendant: She was unapologetic about giving away the present. I can understand why she gave it to Kaku but she could have at least examined it to Virat and apologized got hurting his feelings.
2. College feast invite: She doesn't invite him until he asks for it. . Even after him asking for an invite she sounded rufe the way she spoke to him.
3. Her unapologetic attitude. I had made a post long back where she has refused to acknowledge her mistakes and apologize to him. It's from GC days.

I agree with all of the scenes you have listed. These are yet more indications of how much she cares for him/knows about him.... I mentioned the food hospital one in my post, but the ladoo scene and Alta scene were also just too precious....
Some other moments that I just thought about that stand out to me.
I know people didn't like the ashirwaad scene on her birthday, but to me, it showed the value that Virat holds in her life. She, in front of the entire, family asked for his blessings, because she respects and admires him the most. She was overcome by emotions for how much he cares for her. She thanked him from the bottom of her heart multiple times, over and over again...
In the hospital scene just recently, she clearly told him that he was the most important, special, and respected person to her....
I also agree with you that Sai helps people selflessly and that she craves a family of her own. These are two reasons that she is trying to gain the acceptance of those at CN. But, at the end of the day, all of these family members are just extensions of Virat. During this accident track, in the hospital, she says she has nowhere to call home. She forgets that she has aai, Mohit, Devi Tai, etc... because to her, Virat, is all that matters. She knows that all of these relations are only through him. She came back to CN to take care of him, and she is staying only because of him up until this point regardless of everything that has happened between them. She is going out of her way to gain the acceptance of TriMurthi, despite quite literally being domestically abused and verbally harassed by them on a day to day basis. She knows the value that Ninu and Kaku especially hold to Virat, so this, in my opinion, really does show her concern for Virat and his happiness. During the zillat drama episode when she is forcing them to drink chai before her birthday, she tells them to not tell Virat about any of this drama about them threatening to leave the house and she manages to convince them to stay... because again, she knows that this is the house that Virat grew up in, and she does not want him to ever have to choose between her and the family. You say that even if she was not in love with Virat, she would have done this. And, I agree... but that is because, she has been doing this since the very first day she entered CN out of a respect and admiration for Virat. Again, the wedding reception with kaku is what stands out the most to me.
I think that going to DIG Sir, yes, was a part of who she is. She always stands up for what is right. But, again, it was evident how concerned she was about him losing this position and everything he has worked towards. I personally could see the concern in her eyes for him and in all her dialogues throughout the track. To me, it was quite clear that it was beyond fighting for justice... it was fighting for someone she was growing deeply fond of and had the deepest admiration for.
As to the occasions you have listed where she prioritized other things over him:
1) Ruby pendant: I agree that she could have apologized to him. But, at the end of the day, she gave it to kaku because she showing progress and learning the rules of a joint family. She is once again showing her care for Virat's family members. Also, to Sai, materialistic things don't matter. She was so thankful that he got her the ruby, but at the end of the day, it's just an object. I think that she is so comfortable with Virat that she feels as though she can be completely herself around him... and this is exactly who she is... she thinks about others before herself, even if that means giving up her own happiness. And, I think Virat knows that about her. However, I think that Virat and Sai are still understanding how to communicate with each other and these types of things take time. I don't see her not apologizing as her taking him for granted. In fact, she was so overjoyed and appreciative when she first saw it. She was shocked that he even remembered she had told him about it. I thought the gratitude she expressed was quite the opposite of taking him for granted.
2) She didn't invite him initially because she didn't think he would be able to make it. Once she realized he was coming, it was clear how excited she was. In the greenroom, when he walks in, her entire face lights up. She wanted him to be there all along. In terms of how she came across, I think it was a similar situation to her old age jokes. Her intention is never to hurt him. She teases him in this way and can come across as harsh, but this is again, only because she can be entirely herself with him.
3) I agree that she has been unapologetic towards Virat when she owed him an apology, but there is so much to say here that I would probably need to make an entire post about it. In short, I agree that it has been wrong, but once again, I don't think this showed her disregard for him.
I think throughout all of this, my point is that yes, Sai can come across as harsh. But, even Virat himself sees through it. She has made mistakes just like he has. This is why I always try to see things from both of their perspectives, because I hardly think that only one of them is at fault. I truly believe that both of them are to blame for mostly all of their fights, but at the end of the day, they only come out stronger.... because the most basic truth is that both of them are madly in love with each other... they have different ways of expressing it and showing it, some that are positive and some that are borderline toxic... but these things will resolve themselves with time...
