For the mystery box challenge is cook a roast chicken with orange zest and beetroot and cilantro foams.
And for the butter beans challenge is thought of butter bean falafels served with saffron infused labneh and a side of a citrusy salad - orange, mint, cilantro, lemon sprinkled with zaatar

So today was a challenge to cook a classic dish in pairs from a region, but with a twist. I'll comment on the lasagne one.

If I had the opportunity to do something with the lasagne one, I would have done a khatti meethi cake where the layerings would be of different vegetable chutneys (like sweet pepper, mushrooms, etc.) with a sweet cake, something like khaman dhokla in the middle. The chutneys would be khatte or namkeen and the sweet cake would have coconut and vanilla flavouring. Then I would pour warm melted chocolate over it just before serving and sprinkle it with white chocolate to represent the cheese.

Mine would be -

Dum biryani - I would make the biryani masala with only vegetable and separate the chicken. Make tarts with the mashed vegetables top it up with shredded chicken cooked in biryani masala and then top up with rice. And like icing I would use the same mashed vegetable pure and decorate with fried onion.

Mexican tacos - I would grill the meat with Mexican spices, shred it, put in some red kidney beans, and the tacos is crush (like they crush papdi in papdi chat) mix in some onions, tomatoes and add in sour cream and guacamole and make a bhel like mixture.

For the paella id cook like a regular paella - form balls and deep fry. I'd stir fry the sea food with garlic and add the deep fried paella balls. I'd decorate with a foam of alioli with infused saffron.

For the Italian lasagna I would cook my meat and vegetables in white sauce and some in red sauce. If make pasta sheets and stuff white sauce stuffing in one and red in another and roll into twirls. Bake them with a little olive oil smeared on them. Then I'd make a cheesy dip using tomato, oregano, basil and cheese.

For te others I can't think

For the lasagna I would make a chocolate parfait layering with different fillings. And a spiced chocolate layer with cheese.

Didn't they mean that when they eat the dish it should taste like lasagne but not look like lasagne.

With the eggs-

Id first make a tart seasoned with dry herbs.
Then I'd stir fry some vegetable - zucchini, capsicum, corn, carrots, peas with garlic and mix it with a beaten egg.
I'd fill the tarts with this mixture and bake in the oven.
On top id garnish with a mint and cheese foam and serve with a side of a potato rosti (if time permits) or a green apple and green leafy vegetable salad with a lime dressing.

I haven't cooked eggs before though I'll have eggs when I eat out. So here's something I would try.

An omelet with capsicum, red onions, mushrooms, garlic, carrots, and peas all cut into very tiny pieces. But that's not all. I would make these about 3 inches diameter. I would make about 4 or 5 of these to use as sheets. In between each omelet sheet I would make a different and unique filling.

The bottom would be a simple ricotta cheese and spinach filling so that the omelet sheets will stick together. The second would be a baked vegetable filling made with white sauce with different vegetables. And the third filling would be a lemon meringue.

i never ate eggs in my life lol...so no clue...
