There was a talk about her getting admission in some medical college some where her application being accpeted before leap itself.She did not do it in Jaitser. She probably was away from home fr a few years.
Anandi's case - Why not ?Eleven years is a long time a lot of things can be done if one sets mind on it.She needed to bury herself in something or other.So it is possible that she found something to distract her mind from all the darkness that engulfs her life.
That Gurukul doesn't look like it was established over night - May be she got Martial arts instructor in the begining and now that she learnt she herself is teaching.

Darkness in life did bring out the best in Anandi even before - she took refuge in teaching kids educating herself making herself useful to the village people her school work adult education and what not to keep herself going.
So in these eleven she may have done a lot with herself too.
May be people expected her to totally breakdown and disintegrate with the loss of her Shiv and her the pain and guilt over her daughter's disappearance.She was never the type to wallow in self pity or sorrow she uses all that to bring out something positive.
So there is a logical explanation for everything if we want
Lot of things may have happened in these eleven years in Ganga's and Anandi's lives
