Gauri assuming that Jagat has not moved on is wrong, but its not completely illogical as well.
Gauri has a tinge of hope in her desire becauseJagya is not with anandi and she doesnt know that ganga is in his life. She did not want to see or get treated from him till the point she thought he is with Anandi. she was very sure that they have patched up and hence was wanting to just get out of there. but when she knew Anandi is gone she might very start thinking about him.
I dont say she is right, she is outright wrong in assuming things and hoping J to accept her back after all that happened between them. but given her charecter and the way she thinks it doesnt look out of place at all. Infact it is quite a common psycology, and here we did get to know from her parents and Shivani that she is still stuck in past. So it is all the more in line with her current state of mind.

regarding her screaming after she sees her face...i feel it is a very common reaction. movies and serials might give some OTT reactions, but i would rather be surprised if the patient is all calm and happy just after seeing the new face.
even though Gauri is a doctor and she knows her face is going to be changed, she is a human first and these emotions are same in all. a face is a person's identity, to come to terms with a complete new identity is not very easy.
we fans take months (and in some cases cannot) to come to terms with an actor playing a charecter being replaced (such a hue and cry we do).
and here a real person (even in fiction) is getting a new face and she cannot even scream????? she should just go about saying thankyous and dance away for getting a new pretty face????????
and its still to be seen if she really blames anyone or only is shocked by her new identity
