The most versatile actors in Bollywood in my opinion are:

Senior AB (If there is anything beyond versatility, he has done it, and if there is anything left, he surely will take upon that),Sanjeev Kumar, Ajay Devgan, Nana Patekar, Amrish Puri, Akshaye Khanna, Dilip Kumar, Jeetendra, Paresh Rawal and so many more, feel like I left out lots still..

I would say Hrithik. Not only has he been versitile through his roles, but also through working/conditioning. He conditions for every role ahead of time.
