Wow, this is a nice forum, I sort of fell in here by accident😆 I love anything to do with cooking😃 I have read some of the recipes here, now I have to try them out.

This thread is too quiet, so here I am with a recipe my mother gave me and urged me to try. It only took me twenty years to try it, but it is an awesome dish, and I am regretting not having tried it while amma was alive, so I could have told her about it.

Pulao in a jiffy:

Ingredients:

1 cup long grained rice (I used Ponni rice, actually). Clean and wash the rice and keep aside.
1 onion - sliced finely
1 cup chopped mixed vegetables (beans, carrots, potatoes)
1 tomato
1 tbsp cumin seeds (jeera)
1 tbsp peppercorns (milagu)
5 or 6 cloves
3 or 4 cinnamon stick pieces, each about 2 inches long
1 spoon cardamom (elakkai)
1 long green chili, slit (optional)
1 tsp sambar powder
Turmeric powder - a pinch
salt, to taste

Method:
1. Heat 2 spoons of oil in a pressure pan.

2. Add the cumin seeds, peppercorns, cinnamon sticks, cloves and cardamom.

2. Add the sliced onion, green chili, turmeric powder and fry briefly till onion becomes translucent.

3. Add the chopped vegetables, washed rice, salt and sambar powder.

4. Add 3 cups of water, salt to taste, and cook in the pressure cooker.

5. Turn off pressure cooker after one whistle.

6. Voila! Aromatic pulao is ready!

Hi Eljayma,

I tried your Easy Pulao (Pulao in a Jiffy) a couple of days back, and it turned out great! 👏
I'm so happy that I got one another easy dish which I can make during busy days. It's a wonderful item that can be made without much effort to go in our Lunch box too!. 😃 Thanks for sharing with us.... 😊

Thanks for taking and sharing the picture with us, Supree! I never remember to take pictures when I make something!

This thread is too quiet these days, so I am thinking of going through my mother's cookery recipes and trying them out one by one. Of course, I do them because when I read stuff written by her, it feels as if she is talking to me, but this way, I can share her recipes with all my friends too. I will leave it to you to test them out and take the pictures!

Oh, you are very welcome Eljayma!. I like taking picture of the dishes that I make, especially if I have an idea of sharing that recipe here in the forum with you all. 😃 In fact this reminds me now that, I have a lot of pictures that are waiting on my computer for a recipe to be attached and get posted here!! 😉 Just not finding time yet!. Hoping to do it some time soon! 😃

Yes, I too often think that this thread needs some boost as it;s so calm lately Vs. how fast and active it was once when our Kavi was around! 😭
Anyhow it's nice that you are planning to try, post your mother's recipes to keep the thread active. I too will chip in my participation when ever I can! 😉

Ragi Puttu

This is an easy & healthy evening snack & can be prepared for breakfast as well.

Ingredients:
Ragi flour - 1 1/2 cups
Sugar - 1/2 cup (or more per taste)
Grated coconut - 1/2 cup
Cardamom (Elakkai) - 1
Ghee - 1 tbsp
Cashewnuts - 5 (optional)
Salt - 1 pinch (or per taste)
Water - 2-3 tbsps

Method:
First take the Ragi flour in a wide vessel.Add salt to the dry flour and mix it well.
Now start to sprinkle little water at a time (about 1 tsp) and mix it with the flour gently using your fingers.
Keep doing it until you get to the consistency*, where the flour mixture shouldn't be too wet or too dry.
* It should stay in whole if you take the flour into your palm and press it, but when you try to break it, it should fall apart without sticking too much.
Now take a damp cloth and put the flour in it and steam cook this in an Idli cooker for about 10 -12 minutes. You can use a pressure cooker as well.
After it's done, remove it from the cooker and transfer the flour into a clean vessel and break any lumps if you find. Let this flour cool completely.
While the flour is cooling, take a pan and fry the cashewnuts (broken into small pieces) with a tsp of ghee.
Now add this cashew pieces, the left over ghee, grated coconut, crsuhed cardamom & sugar to the flour.
Mix them all well with a spoon and check for sweetness. Add more sugar if needed according to your taste.
Ragi puttu is now ready!. Enjoy! 😃

That sounds really easy and nutritious, Supree! Let me see if I have any ragi flour in the pantry, otherwise I can buy some today and try it out this evening itself. Thanks, Supree.
