eclat, here is my recipe for kulchas:

Ingredients:
3 cups maida or all-purpose flour (not the self rising kind)
1 cup milk
1 tsp sugar
1 tsp salt
1 tbsp unsalted butter
21/4 tbsp active dry yeast
onion seeds (kalonji)

Method:
1. Warm the milk, add the sugar and the yeast and keep in a warm place for about 20 minutes till the yeast becomes frothy.

2. Sift the flour and salt together, melt the butter and add to the dry ingredients.

3. Make a soft dough with the fermented milk, adding water only if necessary.

4. Take 2 tsp of olive oil and coat the dough with it and leave covered in a warm place for one hour.

5. The dough should have doubled by now. Divide into 12 to 13 balls and leave covered for one more hour.

6. The balls should have doubled by now. Flatten by hand, or roll out (usually I roll out, since my flattening is not very good!), gently press some onion seeds (kalonji) and cook on a hot tawa. When one side is done, cook the other side and remove. Apply hot butter liberally (if you want your kulcha buttered!) and serve hot.

Yield: about 12 to 14 medium sized kulchas. Goes well with chhole.

Try this simple Malaysian kuih.

KUIH LOPES

Ingredients:

2 cups of glutinous rice, washed and soaked for an hour.

2 cups of coconut milk mixed with a little salt

1/2 cup screwpine leaves juice with a little green colouring

1/2 coconut scraped, only the white part

Method:

Strain the soaked rice.

In a bowl mix all the above ingredients, except the coconut.

Steam till cooked, about 30 minutes.

It takes only 10 minutes in your microwave on high.

Onced cooked fluff up nicely, scoop up a ball of rice.

Place it in a clean Nescafe bottle cover. ( This is considered a mould)

Cover the rice with a plastic and press to give a nice shape.

Remove the rice from the cover and coat with scrapped coconut.

Serve with sugar syrup.

Sugar Syrup.

1/2 cup white sugae

1/2 cup brown sugar

1 1/2 cups water

Method:

Boil the above ingredients till slightly thick.

Cool before serving.

Malligai, what is this juice of screwpine leaves? Is there an equivalent like curry leaves? Or can I just use green food coloring?
