Even in south india, mustard is used extensively. We Sindhis also use mustard. What I meant is it’s never the hero of the dish

What I meant was we use Mustard as the main ingredient like a star element. There are a lot of dishes where we use Mustard paste and gravy. Without mustard that curry is incomplete. We call mustard as besara. Some examples are Fish curry, we call it Machha besara. In Jagannath temple a dish is served whose name is Besara itself.
Last season made Besara Chicken in the audition round. KDK was also making Besara prawn but I think she messed up.

Oh that's interesting! The only item I've eaten where mustard is the star is rai aloo. Instead of a strong flavour of jeera, my mom makes it with mustard. It has a very strong flavour of mustard that overpowers the potato flavour as well.
Plus I'm vegetarian so I guess that's another reason I haven't heard of these. 😆
