There are many differences. Some of them are-
Unlike the Northern recension, the Southern recension does not begin with the popular sloka "Narayanam Namaskrutvam..."
There is no mention of Vyasa dictating it and Ganesha writing it down in the Southern Recension
In the Southern Recension, Madari does not commit Sati. She dies soon after Pandu's death. Almost all scholars are unanimous that the episode of Madari ascending her husband's pyre is a latter day interpolation in the NR.
In the KMG version. Draupadi, during her swyamvara, says she will not wed a Suta after Karna had strung the bow and placed the arrows in it. In the SR, Karna attempts but not succeed, thereis no mention of Drauapai calling him a Suta. In the CE (Critical Edition), there is no mention of Karna attempting at all.
In the SR, there is a detailed story of Nalayani (Draupadi in her previous birth)- which is entirely skipped in the NR.
These are the differences I have been able to locate in the Adi Parva alone.
I am sure there are several such differences, but a comparitive sloka- by - sloka study will take a lifetime.
