If you are referring to sanyasis - who renounce the world, then- at the time of taking sanyas, they perform a ceremony, symbolically offering their body to the fire. The mantras associated with the last rites are chanted. Just as the upnayanam (sacred thread investiture) is supposed to be a second birth, sanyas is supposed to be the end. After this ceremony, the sanyasi's body no longer need the usual last rites. There are a different set of rules governing the treatment of a dead sanyasi's body, but the usual way is to bury the body (bury- not cremate) in a sitting position. This ceremony can be performed by anybody- not necessarily sons.
Bhishma does not die in the Mahalaya period. He dies when Uttarayan begins, i.e the sun begins its northward journey. This would be approximately around Jan 14-15- when the sun enters the Makara constellation.Just because Bhishma does not have a son does not mean he cannot be given the last rites. Dritarashtra - who is Bhishma's brother's son is as eligible to perform the last rites as a natural son. So that would have been the least of his worries.
