1) Rishabh has built a wall around himself that he doesn't want to get destroyed and Madhu saving him was like a brick taken away from his wall which would not lead to the breaking of his wall but like a little dent, which would let the water or in this case [love] flow through it for which he is not prepared.
Since the moment his father died, he grew up to be a man, silent, reserved and hating on his mother and Bhatia [I refuse to call hims step-father], not because he's heartless but he feels that his most precious memories, his father, he, the child was betrayed. Betrayed in the sense that his mother decided to remarry to a guy like Bhatia which I assumed happened with months/days of his father's death which came as a huge shock. For someone who loved his father very much, he couldn't digest the fact that his mother remarried to a guy with the likes of Bhatia and started hating on her and Bhatia [with whom he didn't have a strong connection anyways].
So after coming out to be so emotionless, he realized that he needs to make MB hate him. For him, he doesn't want her pity, her care because it makes him look weak and knowing that if he starts to care, starts to show his feelings [like yesterday, it took all he had in him to stop Bhatia from hurting Madhu's hand when Bhatia was pushing money in her hand] and that was a weakness. For a boy who spent all his life standing up to Bhatia, MB could destroy that and then Bhatia will use that against him.
And thus why, whatever he said to Paddy, to MB was so that they'd hate her, and MB will do everything in her power to try to destroy him, hate him for insulting her mother, her family and he was okay with it. Not because he wanted to insult Paddy, but because he wanted MB to hate him, not care for him, not make him feel guilty for being a [insert a bad word] to her.
He spent so much of his time making people hate him, be afraid of him that didn't want MB feeling comfortable, by being his slave. He wants her to fight him, not agree with him. He wants her to be her old self, the one that sent him to jail, not because he's kuch kuch hota hai to her, but I guess because he wants it. Just like the reason why he didn't let her touch his feet, because he doesn't want her to bow down, even though he stopped her because of her 'bad' hand.
At this point, all I know is that RK wants MB to hate him and it's working.
2) See, the way you described MB, it seems as if she is everything to RK. Yeah, it may not be the 'everything' way that we want it, but according to her duties and responsibilities, he's doing everything to make her stay close to him. The episode itself showed how possessive he is of her. He doesn't want her delving into his past because he doesn't want her feeling any sort of sympathy for him and neither does he want her taking the responsibility of being his 'spot girl' to the T as we saw his expression when she was talking to the other dude at the shooting. I felt his expression was more like "How dare he talk to my biwi?"
And like you said, RK has all the pride in the world whereas MB has honour.
