Mumbai's foodies reveal why this special preparation of rice is celebrated
The Moghuls may not be around but their flavours still seduce our taste buds - especially the biryani. Truly the king of good times, the biryani makes its presence on the dining table when there's a celebration at home. The biryani's journey is a little hazy - was it from Persia or Afghanistan or did it originate from Lucknow?
"Cooking biryani is an art. The process of dum cooking plays a major role in this process. We follow the recipes of the royal kitchens of Awadh," explains Madhu Krishnan, executive chef, ITC Grand Sheraton & Tower and adds, "Singer Adnan Sami gets us to make his biryani on and off. It has the meat of a young lamb with mince."
Actor Chunky Pandey is a big biryani fan. "I absolutely love biryani. The nalli biryani is my favourite and there's something called a kutchi biryani that I would have when I would travel to Bangladesh - fantastic!" he says. His favourite desintation - "Jeff's biryani in Bandra rocks! They are caterers but it tastes great. Lucky's chicken biryani too is very good."
Actor Zarina Wahab may be modest about her cooking skills but she's known for her authentic Hyderabadi biryani. "I make it just like everyone else does. There isn't a set recipe; I've learnt it from my mom," she says and adds, "In fact, the smallest restaurants have the best biryani."
Mommy's darlings Rakshanda Khan and Iqbal Khan agree that the best biryani is made at home - and by their mothers. "I don't know how to make it but the way my mom makes it, no one or no restaurant can come close. It's said that if you think of the person you're cooking for, the biryani turns out better! This definitely is true for me," says Iqbal. Rakshanda is a strict vegetarian with a twist - "When ma makes it, I only have the rice as I'm a vegetarian. The trick lies in the marination and the dum. I have never learnt to make it, but ma definitely is the best cook ever," she smiles.

STAR Plus fights back with 'Kkavyanjali' wrap

In India, the 21:00 - 22:00 timeslot has seen some intense competition between STAR Plus and ZEE TV, with the latter giving market leader a run for its money in a big way!

India's top rating channel STAR Plus is axing Balaji soap 'Kkavyanjali' later this month (next month in the UK) and replacing it with another Balaji offering called 'Karam Apna Apna'.

Commenting on the change, Shailja Kejriwal, Creative Director, STAR India admitted that 'Kkavyanjali' hadn't worked as per expectations. She said, "The show started very well and we had always designed it as a finite show. It has even given us 12 plus on peak days. However, I think the problem came in when we changed the story track to give it another lease of life. The show has been slipping since and we didn't see any point in dragging it further."

ZEE TV's 'Saat Phere' and 'Kasamh Se' have been delivering record numbers in the past few days and so rival STAR Plus is pulling out all the stops to make sure it remains the most watched in that timeslot. Recently, the channel also launched 'Virasaat' during primetime. 'Virasaat' was brought in to replace 'Milee'.

'Viraasat' has so far been playing in between the 4 and 5 TRP region for STAR Plus, which by STAR standards are very low. Commenting on the numbers of the new show, Kejriwal said, "At present, I am very happy. The show has clocked in an average of 6 plus last week and that indicates that it is on an upward trend, which is very good news."

With ZEE TV launching 'Dulhan Banoo Mein Teri' and Sony launching its mega dance show 'Jhalak Dikhlaja', its good timing for STAR Plus to make the changes. But will the changes perform? Keep it with BizAsia.co.uk for updates.

'I have to start from scratch again'

Sandiip Sikcand, the chief creative director of Sony, speaks about his new job profile, game-plan for the channel and life after Balaji

Why did you quit Balaji?

I did not have any specific reason to leave Balaji. I was getting stressed out and the long hours were affecting my health. There were times when I was working 38 hours at a stretch.

I also had my own set of personal problems. I took a break and before going for it I told Shobhaji that I might not return. I got a brilliant offer from Sony and decided to take it up as a challenge.

What is your present job profile?

I am in charge of all the shows on the channel. I am working on newer concepts and storylines. I provide creative inputs to the team.

Doesn't being the chief creative director mean long hours of work again?

I am not scared of working long hours. Work here is lot more streamlined. It's a new challenge for me and I am raring to go. People might think this move was not a sensible one, considering the hard work that I put in with Balaji. It's a clean slate now and I have to start from scratch to prove myself again.

The channel has not been able to garner TRPs with soaps and has only been popular with reality shows. Do you have a game-plan for the channel?

We have been popular with shows like 'Jassi Jaisi Koi Nahin' and 'Ek Ladki Anjaani Si'. There will be several new soaps which will have a definite storyline which the viewers will be able to relate to. Our reality show, 'Jhalak Dikhla Ja' will also be unique.

Will you have time for theatre and films?
Theatre will always be my first love. My film 'Woh Lamhe' will release by the end of this year. I will take film projects only if they are exciting.

A WHIFF of fragrance that wafts through your mind long after the scent breezes away. The svelte Rakshanda Khan is perhaps best portrayed this way if you happen to come across her. An impressive personality, an innate sense of style, and with a voice that stops your steps to take notice, the Khan girl though, describes herself as "a busy bee" these days. Live events, tele-serials, modelling, anchoring... she seems to be doing everything. Already reaping fine response as Mallika in the popular Sony soap, Jassi Jaissi Koi Nahin, she now features in Star Plus's star serial, Kyunki Saas Bhi Kabhi Bahu Thi... And, being in the top shows of two rival channels, Rakshanda says, she couldn't have asked for more. "For most days, I have to get up very early in the morning and the whole day passes off either in front of the camera or dubbing. Though, I knew that being in two dailies and one anchor show besides my other assignments in live shows etc, won't be a cake-walk. But, at the end of the day, I feel happy which is what is counted finally," says this Mumbaikar. Full of giggles and smiles even after a 13-hour shooting shift, Rakshanda says two months after Jassi... happened, Balaji Telefilms contacted her for the role in Kyunki... .

"Since I worked in Balaji Telefilms' serial Kya Hadsa Kya Haqeqat, they knew my work. I also told them very clearly that I would not be interested in doing a similar negative role as in Kya Hadsa... if I am considered for any of their serials. So, when this new character was thought of in Kyunki..., they approached me," relates Rakshanda. Entering the serial as a foreign investor willing to work with the Virani Parivaar, she hopes the role catches audience notice. "When I meet people, specially children and older people, they tell me how good I am as Mallika in Jassi... Little girls tell me when they grow up, they want to dress up like Mallika. So, you see, there is appreciation, there is admiration. I hope, the new role in Star Plus too is well accepted," she says. Starting off with modelling, anchoring, and then serials, Rakshanda, being the first in her family to enter the world of showbiz, says she is still apprehensive to take the big leap - films. "There is so much happening in my career. I am actually very happy with this. Since the time I was modelling, I have been getting film offers but that is a territory I am not very comfortable with and so I don't want to tread it yet," the lady is quite clear about it. Being in the show world, isn't she a little strange?

'K' show rate hikes: Balaji expects 8% rise in turnover

MUMBAI: Balaji Telefilms Ltd. is targeting a 7-8 per cent growth in turnover to around Rs 3.1 billion this fiscal on the back of a rate hike on four of their popular TV serials and an increase in programming hours.

The investment in capital expenditure for the year is estimated at Rs 250-300 million. "We are adding two more studios this year. The capex is also towards equipments and sets," a source in the company says.

Of the four serials that will come up for an upward rate revision, three are expected from Star India and one from Zee Telefilms. Balaji makes a prime time show, Kasamh Se, for Zee TV.

The paid up capital for Balaji's wholly owned subsidary company at Sharjah will be Rs 40 million.

The company is making a serial for ARY which will go on air by the first week of November. "The serial will air four days a week. If demand for our shows increase, we will invest in ramping up our facility. We don't expect revenue inflows getting reflected this fiscal," the source adds. The subsidiary company will produce serials aimed specifically at the Middle East market.

Prachi denied a Dubai visa

After changing the venue from Bangkok to Dubai for the outdoor shoot, the team of 'Kasamh Se' (Zee) have a new set of problems on hand. First, Bani, (Prachi Desai) the protagonist of the show, did not have a passport to travel for the shoot. "I have never travelled abroad and this will be my first trip. In fact, none of my family members have travelled abroad before," reveals Prachi.

Sources close to the channel reveal that since Prachi did not have a passport, there had to be a last minute scramble to get everything organised. Reveals Nivedita Basu, deputy creative head, Balaji, "Initially, we all panicked when we realised that she does not have a passport. But now the problem has been sorted out."

But, that's not all. There seems to be another hurdle in obtaining Prachi's visa. Since Prachi is only 17-years-old, the Dubai authorities have refused her a visa. Insiders say that if Prachi's visa does not come through, the outdoor shoot will have to be stalled because she is the focal character in the track. "I know there is a problem with my visa. Since no one in my family has a passport, I cannot take any one from among them as my guardian. But I am turning 18 on the 12th of this month and I think everything will get sorted out. I am looking forward to this trip and am excited about the long shopping list with me," laughs Prachi. The production house is also a bit sceptical. They have to get the visa issue sorted out because the team is scheduled to leave on the 16th. The team will be in Dubai for a week for a dramatic development in the track and only the main characters will be travelling.

Roshni Chopra's (aka Pia of Kasamh Se) trousseau shopping came to a halt recently after she was mobbed by onlookers. She was in Delhi, shopping, when all of a sudden a crowd gathered around her and wouldn't let her continue. Roshni says, "I am getting married on December 10 (to director Siddharth Anand Kumar), and hadn't yet started my shopping. So, at my mother's insistence, I took some days off and went to Delhi to shop. But the people there recognised me and crowded around me. They kept asking me about Kasamh Se. This angered my mom no end. She complained that I do not have the time to shoot and when I have the time, I engage myself in talking to public."

Apparently, Roshni's mother then suggested that she cover her face so that nobody recognised her. Roshni laughs, "My mom suggested I cover my face and I had no option. I bought lots of traditional Indian wear like saris and salwar kameezes. Even then, I couldn't complete my shopping. The Kasamh Se unit is flying to Dubai soon, so I intend to shop a lot in Dubai. Meanwhile my mom will do the rest of the shopping here."

Incidentally, Roshni's wedding coincides with that of another telly couple, Arjun Punjj and Gurdip Kohli. "I believe Gurdip too was in Delhi to shop for her trousseau. Some of the shopkeepers told me that she too had come there. I guess the television fraternity will be divided on whose wedding to attend on that day. I hope at least the Kasamh Se unit is able to attend my wedding. We intend to get married in Delhi since Siddharth and I are both from Delhi. We will have a long marriage ceremony, over two weeks, complete with every ritual like keertan, mehendi, sangeet and choora. I want to be the traditional Indian bride," says Roshni.
