Yes it was cruel if you think a father did that to his son. But Khusrau had rebelled three times after Akbar's death and tried to assasinate Jehangir few times by sending assasins. The Mughal empire was in constant civil war because of Khusrau's rebellion. The court nobels suggested putting him to death to stop another civil war but Jehangir did not want to kill him. So he ordered his blinding like Humayun had ordered blinding of his brothers after Kabul war to avoid further rebellion. But after a few months Jehangir regretted his action and got the best doctors to ensure he got his eye sight back(he got a bit back not all) and also allowed him to attend court proceedings. His wife and kids were allowed to stay in palace with family after rebellion.
Jehangir's rebellion with his father was a different kind it did not involve civil war. The only person killed in their fight was Abul Fazl no one else died.
There are different versions of how Akbar really died
1) Ill health
2) Poison
3) An injury during hunting (most probable reason)
There was another incident when Jehangir was 25 years old or so his father became very unwell and was not getting well so Abul Fazl who was Akbar's best friend suggested him that Jehangir may have poisoned him to become emperor in front of all courtiers. Akbar who trusted Abul Fazl openly chided Jehangir in front of courtiers that if he wanted to be emperor he could have told Akbar he would gladly abdicate why did he have to attempt to kill him by poison. Jehangir was very upset as he had not really poisoned his father and hence kept a grudge on Abul Fazl. May be this incident made people think he had killed his father by poison later on.
Jehangir was a very complex character in history he could be very kind and considerate at times to enemies but sometime be very cruel.

Hey Rahim's children were also killed by Jehangir na.. Or was it Shah Jahan.. I don't remember.

Yes they were killed for supporting rebellion of Khusarau at Khooni darwaza
This khooni has seen many deaths notably
Dara sukoh head was displayed by his younger brother Aurangzeb there
Bahadur Shah's children all sons, daughters, grandchildren etc were killed by British here.
Here is what given in wikipedia
The Khooni Darwaza (Bloody Gate) earned its name after the three princes of the Mughal dynasty - Bahadur Shah Zafar's sons Mirza Mughal and Khizr Sultan and grandson Mirza Abu Bakr, were shot by a British Soldier, Captain William Hodson on September 22, 1857 during the Indian Rebellion (also known as the Indian Mutiny or the First War of Indian Independence). Hodson obtained the surrender of the Emperor, and the next day asked for an unconditional surrender from the three princes at Humayun's Tomb. Hudson arrested about 16 members of the Emperor's family and was transporting them from the fort in horse driven carriage accompanied by a platoon of 100 "Savars" or mounted soldiers.
On reaching this gate, he was stopped and surrounded by thousands of Muslims, with white cloth tied on their foreheads (a symbol for the shroud) Jehais or Gazis. Hudson latter recalled, "I was surrounded on all side by Ghazis as far as my eyes could see."[citation needed]. According to Archaeological Survey of India's, board on the site/gate[citation needed], it says Hudson, made them remove their "upper" garments) and using his service "sword" he "hacked"/cut the heads of all three sons, and entered the carriage and "slaughtered all men, women and children." Others[citation needed] assert that Hodson ordered the three to get down at the spot, stripped them naked and shot them dead at point blank range. The bodies were then taken away and put up for public display in front of a Kotwali.

You will be surprised to know that Nur Jahan was the attender(or nurse maid whatever you call it) of khurram.
Nur Jahan after death of her husband was working for Ruqaiah begum as her attendant and her major responsibility included caring for the child Khurram (like how maham took care of jalal) who stayed with ruqaiah

Here is a story of how Mughal custom of cook who cooked food had to eat it first before the emperor started
Sultan Ibrahim's mother Buwa was allowed to stay in agra court by Babur. She attempted to poison Babur on December 21, 1526 by bribing his cook. When he vomited blood just after the meal he realised his poisoning and drank some opium in milk as an antidote. From that day Babur made it a rule that food presented to the emperor is first tasted by cook in front of emperor and then only he can have. This policy was followed by all mughal emperors.

i have no idea of other kings. This is story given in the book "empire of mughal" about how cooks started tasting their food before giving to mughal emperor.
