Also liked the fact that payal seems to be exactly the kind of girl the doctor ordered for Akash. Good that payal is pushing Akash to reconcile with khushi and the kiss... Akash was hinting that he likes Payal, as in more than friend. "Flying" in this case was supposed to represent love. So he indirectly says that because she taught him how to love properly and start living again (by forgetting his insecurity, break-up, etc.), for him, she will always be the definition of love.

I'm sorry if it was super confusing - Akash is very artsy; hence the metaphors! 😊
