Salman and Katrina technically broke up a long time before their separation became public. In fact, the awkwardness was pretty much obvious during the shoot of Ek Tha Tiger and the promotional spree later on. The reason they split is because Kat felt stifled in this relationship. She felt that with Salman, she could never go to a public restaurant for dinner, take holidays, or do stuff that any normal couple does. If you notice, ever since she started dating Ranbir, her outings with him have increased. Obviously, they prefer a foreign locale like Ibiza or New York to travelling in the country, but RK and Kat have had many more secret trips overseas than reported this year.
Salman is a family guy and his idea of "chilling out" or going on a holiday is to perhaps travel to his Panvel farmhouse and spend the weekend or have a drink at home and unwind. Kat felt the age difference was coming in their way as well. Furthermore, I am told by a source that there were also intimacy issues between the two.

RK and Kat are in a committed relationship as of now and there is no confusion on that front. Whatever the two say in public space or chat shows is very different from their actual romantic status. So don't buy or believe everything they both say on public platforms. Marriage is on their cards, too... but not anytime soon, so you will have to wait.
