yeh, but i guess the turban is like a universal symbol of punjabi.. people in the west associate the headgear with punjabi/sikhism, so maybe they wanted to make the religious/cultural background of the family explicit for the non-desi audience.
i don't think most people will care if the actor has a real or fake beard, whether he's a real sardar or not, actors are hired based on what the character demands... and Anupum Kher has been in a few western productions so he's a familiar face, besides a good actor.
